What can I say in a review about Mediterranean Snack Food Company’s Baked Lentil Chips? – not much, accept they are gluten-free and I am addicted to the Sea Salt Cracked Pepper! Perhaps it’s the spiciness of this chip which causes me to not stop eating them. Not all flavors are spicy, though.  Thank goodness they only sent me one bag of the Cracked Pepper! The scale would tell on me! However, they are baked, not fried, with only 110 calories for 22 chips and the chips are pretty thick, like corn chips! So, enjoy! While at the Gluten Free in Fresno Support Group meeting at Whole Foods on Wednesday, January 26, 2011, I heard from a couple of members that they assumed Rice Dream milk is gluten free because it said so on the label. At that time I believed it not to be safe for celiacs, as they use a barley enzyme in their manufacturing process. And though they said it was processed out, anyone with a gluten intolerance may be afraid to risk it. At that time there was no testing done on the product, or at least it wasn’t publicized. Someone recently asked me if I had a gluten free cherry pie recipe, and it got me thinking. It is my husband’s fave, though I do not care for it. I thought I would make him a gluten free treat and try one of the gluten free pie crust recipes from “Gluten Free Cooking For Dummies®“.  Because all flours measure differently, my dough ended up very crumbly. So, I added a bit of shortening to soften up the dough which makes crusts nice and flaky, too! I only had 2 cans of cherry pie filling, but really needed 3 for my pie pan, but it worked out alright anyway. Please make sure you read the labels of any pie fillings. You do not have to own a pizza stone to make gluten free pizza crust, though a preheated stone does absorb moisture, creating a more crisp crust, without the use of additional oils and calories. I like to make pizza crust ahead of time, bake them for about 5 minutes and then freeze them. This enables me to come home after a busy day and just top them and bake them – voila! – a great gluten-free pizza ready in no time! Chewy, crunchy and a nice high dough on the edge! Gluten-free Chicken Potato Casserole

This one dish gluten free casserole is very easy to make! Rather than wait 1 hour in the oven to bake chicken and potatoes, you can cook it on the stove top in 15-20 minutes, depending upon the size of your potatoes. And you can leave the skins on the potatoes if you desire, which speeds up the prep work. I appreciated this recipe because it uses only one pan. To my surprise, as I am not usually one to eat chunks of onion and especially garlic, they turned out so sweet in the dish! I hope this makes your gluten-free dinner meals faster and easier! While on our at-home vacation I wanted to make a few special dinners. Though this gluten-free pasta recipe is high in calorie, my husband may have ordered this dish at our favorite local Italian Restaurant, Nativo’s. However, we had it at home, all gluten-free!
