Gluten Free Black Bean Brownies

Bean flours create higher risen baked goods, but many of the flours create a bitter flavor. One way of getting around this is by using cooked beans. I prefer to use refried black beans. They’re so creamy and not bitter at all. The dark color is perfect for chocolate dishes such as this gluten free brownie recipe. It is dairy-free, gum-free, and grain-free, techinically, as buckwheat is a seed, not a grain. Some refer to buckwheat as pseudograin.

Gluten Free Indian Fry Bread

Navajo fry bread was made by the Navajo Indians. Once other tribes began creating their own versions of the bread, it was known as Indian fry bread. Not all recipes for Indian fry bread contain yeast, but this version does. Some use cornmeal, while this one does not. I got the idea when a reader recently emailed me about how my gluten free pizza dough recipe (that you can make in a bread machine or not) turned out to be perfect for gluten free Indian fry bread. She doesn’t use a bread machine, but makes the dough by hand. You can do either. I have adjusted the recipe a bit if you just wish to try 1/3 of the pizza dough recipe. I used less egg white, a little more oil, a little more water, and a higher ratio of cornstarch for crispness. To my amazement, it was absolutely fabulous! I didn’t expect this Indian fry bread (actually a flatbread) to be appealing since it is a thicker dough than I am accustomed to using for what I consider American-Mexican food, but it was. Enjoy! Make Ahead Baked Gluten Free French Toast

My father is visiting with us and is 100 years old. While he enjoys my newest Gluten Free Cinnamon Raisin Bread Recipe, he finally admitted that he doesn’t appreciate the harder crust which is a result of long baking in my bread machine. He’s always enjoyed soft food, but as he ages, soft food is a requirement. He’s never even care for his bread toasted, just warmed, not brown or golden. So, I thought I would soften the ends by making him French toast this morning instead of dry toast and his awful cream of wheat (he’s not gluten free). The acidic fruit has been getting to him anyway.

To speed up the process I soaked the bread overnight. This way it was all set to fry up in the morning. Caring for an elderly parent is a lot of work and mornings are pretty busy. ‘Tis the season for everything eggnog, pumpkin, peppermint and gingerbread. This gluten free granola recipe is no different, as it is gingerbread flavored. Nature’s Path makes one where for everyone sold, they done one to a food shelter. However, unfortunately, it’s not gluten free. Once I saw it, I just had to create my own recipe. I used most of the ingredients they use, accept I used “gluten free” oats, added tons of nuts, some brown flax seed meal (it has more omega’s than golden flax seeds), agave and honey. I didn’t have any crystallized ginger, but omitted the rice starch intentionally. Because it contains evaporated cane juice sugar, it turns out crispier than the Gluten Free Granola Recipe I usually make.
