I love my Eggnog Cheesecake recipe because you can do so much with it. Adding a chocolate cookie crust and chopped chocolate cookies and topping it with ganache, gives it an entire new look and flavor. The cheesecake itself doesn’t taste like eggnog, but it’s a wonderful way to use the little you have left. Enjoy! Continue reading “Gluten Free Eggnog Chocolate Cookie Cheesecake”
Gluten Free Holiday Green Beans
While green beans are gluten free, not all brands of bacon are. I’ve been making this bacon and onion green bean casserole during the holidays for decades. It’s my favorite dish that I just can’t live without. My family loves it because I don’t skimp on the bacon. There’s nothing worse than being one of the last ones to dig in and have to dig for bacon. I hope you enjoy this recipe as much as my family has. Continue reading “Gluten Free Holiday Green Beans”
Gluten Free Napa Cabbage Kimchi
Kimchi, also spelled kimchee and gimchi, is a fermented Korean side dish made of cabbage and other vegetables with a number of other ingredients. In traditional preparation, kimchi is fermented in jars underground. There are too many different varieties of kimchi to mention, but I enjoy the napa cabbage version. Napa cabbage is tender and sweet. This recipe is my own mildly spicy version. It reminds me of spicy coleslaw that has rested overnight or a couple of days, you know, when it becomes soft instead of crisp. Kimchi may be eaten fermented or fresh, which is how I use it. Serve this napa cabbage kimchi with rice and Korean pulled pork or strain it and use as a filling with pulled pork in Gluten Free Egg Rolls. (Stay tuned in for my Korean Pulled Pork Recipe.) Gluten Free Chicken Cordon Bleu
I have only had chicken cordon bleu once in my life, a matter of fact, it was when I was still dating my husband, back in the 70s! Making gluten free chicken cordon bleu was a breeze. It’s not much more difficult than breading chicken. However, it’s delicious! My version uses an herb prosciutto mix. However, you can use slices of prosciutto instead, to make it easier, which is the traditional method. I enjoyed the extra herbs, though. Plus I had some leftover from my Pork on Pork recipe. Waffle Iron Gluten Free Quesadillas & Spicy Dipping Sauce
In my attempt to create more single-serve recipes, I recently tested out my small, inexpensive, ceramic waffle iron to make gluten-free quesadillas. They turned out incredible! They have a slight crispness to the outer shell, which you can control by cooking shorter or longer. The inside contains gooey cheese with chicken, or any other addins you prefer. Then dip some non-fat, sweet & spicy dip on top for some kick! Continue reading “Waffle Iron Gluten Free Quesadillas & Spicy Dipping Sauce”
Gluten Free Mornay Sauce
A Mornay sauce is made up of a basic white sauce, bechamel, with added cheese. I thought I would share this recipe with you so that you can use it to top delicious recipes such as Chicken Cordon Bleu to macaroni and cheese. You can also use it with baked fish and sauce for veggies. Continue reading “Gluten Free Mornay Sauce”
Gluten Free Cream Cheese Pound Cake
I’ have eaten two amazing pound cakes in my life. This gluten free cream cheese pound cake is one of them. The other is the Gluten Free Bundt Pound Cake, which is lighter.
I had originally created a gluten free sour cream pound cake recipe for another website client of mine, but they temporarily removed it from their site while building another website. One of my Facebook followers was frantically searching for it as it is her family’s favorite recipe. So, I have created this recipe for her. I hope you enjoy it just as much we have. Gluten Free Beef Stew – Pressure Cooker Method
Pressure cookers went out of use decades ago, but for those of us who still own one, it’s time to dust it off. Why waste energy when you can cook meat to fork-tender in minutes? Let’s bring back pressure cooking! I have an old Presto Pressure Cooker, but they sell an extremely similar version, still at a great price. Continue reading “Gluten Free Beef Stew – Pressure Cooker Method”
Gluten Free Beef Gyros
When Chobani sent me coupons for their amazing Greek yogurt, it inspired a few new recipes. To start the ball rolling, I made a Greek cucumber yogurt sauce and used it in these delicoius gluten free beef gyros. Instead of pita, I used my gluten free galric naan recipe (Indian flatbread). If you haven’t tried it yet, you must! You will find the links to all of these recipe in the below gyros recipe. Enjoy! Continue reading “Gluten Free Beef Gyros”
Greek Cucumber Dill Sauce or Dip (Tzatziki Sauce)
Tzatziki sauce is a Greek cucumber sauce served with meat or used as a dip. Tzatziki is primarily made of strained yogurt, in this case, Chobani Greek Non-Fat Yogurt. It’s gluten-free! They sent me some coupons for a few free yogurts so that I can create a tailgating recipe for them. Though this sauce is Greek, you can use it with other cultural foods such as saucy Indian dishes, as a dip with naan (Indian flatbread), on enchiladas, and as a dip with veggies as a snack. For authentic Greek dishes use as a sauce for gyros, or as a dressing for cucumber salad or other Greek salads. Gyros are perfect for tailgating.
