There’s nothing like a good shortbread cookie with a cup of tea. We used to devour one of my former client’s gluten free lemon shortbread cookies (Simply Shari’s), but I can’t have them anymore because they contain tapioca and citrus. My husband still enjoys them, though. Meanwhile, since my flour blend recipe calls for tapioca or cornstarch, I can make my own shortbread cookies. My hubby misses lemon desserts since I realized I was allergic to it. So, I’m trying to make enough to freeze for him to enjoy!. I hope you enjoy them as well.

If you like idea of the red, white and blue theme of 4th of July and Memorial Day, using fruit instead of artificial coloring is the way to go. Gluten Free Blueberry Muffin in a Mug Recipe

While I have a few gluten free cake mug recipes, I had not yet developed a muffin in a mug recipe yet. Wanting a bit healthier version of the cake mug recipe, I decided to add a bit of flax seed meal to the cake recipe and add some blueberries. Summer heat already gotcha down? Try a refreshing salad instead of hot meal. Many people have trouble making gluten free pasta salad in advance. Rice pasta gets hard when refrigerated overnight. There are a couple of tricks to get you to succeed,though. Don’t use rice pasta. Try pasta made from other grains such as corn, quinoa, etc. If you must buy one that contains rice, at least make sure it is a mixture of other grains, too. Then, prior to refrigerating, add dressing, or at least oil, to the pasta to keep it soft. Keep in mind that gluten free pasta absorbs liquid quickly. Enjoy! One good thing about muffins is that they are heavier than cupcakes, and you don’t have to own a powerful mixer to make them. Adding a high ratio of healthy gluten free flour containing more protein than white flour, makes them healthier. Adding a bit of coffee or espresso to a chocolate muffin recipe creates the best little gluten free mocha muffins you can image. Plus, they get you started in the morning. Enjoy!
