Gluten Free Red White & Blue Pie

If you like idea of the red, white and blue theme of 4th of July and Memorial Day, using fruit instead of artificial coloring is the way to go. While I prefer to use natural food coloring, blue is difficult to create. Make this gluten free red white & blue pie using my Gluten Free Banana Cream Pie Recipe. You have your choice of multiple crust recipes. Of course, you can always use a gluten free ready-made pie crust at your store. Gluten Free Red White & Blue Pie

A gluten free red white and blue pie recipe using my favorite pie recipe, banana cream, using my latest pastry cream recipe. It's to die for and perfect for any American holiday.

Instructions:

  1. Make the pie crust of choice in the above link to the banana cream pie recipe. The shortbread is amazing, but it's difficult to prevent the crust from falling down on the sides. You must use dried beans to keep them up. That crust is for advanced pie bakers only.
  2. Make the filling for the pastry cream using the gelatin/boiling water mixture. Set aside until it reaches close to room temperature.
  3. Pour the filling into the pie crust and chill until cold and set in the refrigerator, about 3 hours.
  4. Garnish the top using the sliced bananas, strawberries, and blueberries.

Tips

If you toss the bananas with a little lemon juice, it will prevent them turning brown. If you are allergic to lemons, try using honey or a lot of cream of tartar mixed with water.
