Acorn squash is hearty (not as hearty as sweet potatoes, but much heartier than summer squash) and tastes incredibly sweet when roasted. If you are in a hurry for a fall or Thanksgiving vegetable, this one is sure to please with very little effort. The garlic and Parmesan provide the most beautiful flavor.

Gluten Free French Fried Onions Recipe
While I already have a Gluten Free Onion Ring Recipe on this site, this recipe is used with my Green Bean Casserole Recipe. There isn’t much difference between the two, other than the spices. You can even skip the onions altogether and add additional onion powder to the batter. Then add the batter to a squeezable, plastic mustard container or pastry bag fitted with a small tip and squeeze little strips into the hot oil and fry until crunchy. Either way, they’re so good! Gluten Free Pumpkin Mac ‘n’ Cheese with Optional Bacon
Similar to it’s baked cousin, this gluten-free macaroni and cheese recipe contains a bit of both pumpkin and cheese, but is made without egg. The pumpkin provides accents of fall and a bit of sweetness. The leeks or onions are used as a substitute to add sweetness and savoriness. Best of all, the optional bacon makes everything taste even better. No matter how you choose to make this dish, everyone will be begging for more. Gluten Free Caramel and Pecan Blondies
Blondies are dessert bars, blonde brownies. The cake portion traditionally contains flour, butter, brown sugar, baking powder, vanilla and eggs. Similar to chocolate brownies, they are a bit heavier but blonde in color. These decadent gluten free blondies are topped with dulce de leche (thick, rich caramel) and pecans. The cake layer is made from traditional blondie ingredients. Enjoy. Continue reading “Gluten Free Caramel and Pecan Blondies”
Gluten Free Paleo Peach Crumble
Sometimes there is confusion between crumbles, crisps and cobblers. They all contain a fruit filling topped with various ingredients. A crumble and a crisp have a crunchy topping. A crisp contains oats, where a crumble does not. A cobbler is topped with dough, much like biscuit dough. If you’re not paleo, you can add some certified gluten free oats and you’ll have yourself a gluten free peach crisp. Enjoy this gluten free paleo peach crumble! Gluten Free Zucchini Cakes
After a Facebook fan tried my Zucchini Hash Browns Recipe, she asked for a recipe that would hold the zucchini together. This is a wonderful solution; however, the two recipes are quite different. These gluten free zucchini cakes contain flour, specifically, my homemade gluten free bisquick (baking mix) recipe. They are lightly sweetened, yet savory, and fluffy, yet moist. Enjoy! Orangecello is an Italian delight. Serve it over ice, mix it with wine or champagne and serve as a spritzer, or add it your favorite cocktail. Make homemade orangecello with little effort. Cent’anni! Creamy Italian Gluten Free Rice Pudding (Egg-Free)
Arborio rice, the Italian rice you use to make risotto, is the perfect rice to use in rice pudding. It is extremely starchy, creating the perfect, thick texture. Vanilla may be the standard in flavoring rice pudding, but you can create a citrus, rum, or bourbon flavor. Add raisins or not. Your choice! Gluten Free Fudge Cake with Cheesecake Filling
I was digging through my late mother’s old recipes and stumbled across a cake she had never made, at least not while us kids were still at home. It was Double Fudge Fancifill using Pillsbury Plus Cake Mix, which they no longer make (contained gluten). It had a cheesecake-like filling between layers of chocolate cake and frosted with Pillsbury Ready-to-Spread Chocolate Frosting Supreme, which happens to be gluten-free and is still on the market.
