Many of my Facebook followers have requested that I develop a gluten free pie crust recipe that does not call for superfine rice flour. This one turned out flakier than any other pie crust on this site. I have used it to make mini gluten free chicken pot pies, regular size, as well as a gluten free peach pie. They all turned out delicious. You will find that refrigerating the dough once rolled makes transferring the rolled out dough to the pie much easier. Jello is gluten free and enables you to make a very festive gluten free fourth of July jello dessert recipe. Gluten Free Strawberry Ice Cream Recipe

This strawberry ice cream recipe is gluten free. Most ice cream recipes are except for the ones with addins that contain gluten. Made with old fashioned custard base, this recipe is creamy, but doesn’t freeze up as solid as many homemade ice cream recipes because of the added gum. It helps prevent crystals from forming and provides a bit of chew, just like commercial brands. You can add more xanthan gum, if desired. This easy gluten free pasta salad is great at picnics as you can remove it from the ice chest to reach room temperature when you first arrive. Jerk Chicken (Gluten Free)

Jerk spice is a very hot and spicy seasoning mixture popular in Jamaica. It can be made applied to meat wet or as a dry rub. This gluten free version of jerk chicken can be made with mild peppers. I used canned green chiles. If you’re a brave sole you can use hotter chiles such as habanero and jalepeno peppers*. They pack a deadly heat, but I’ve provided some pointers for you in the tips section. Habanero peppers are the hottest chiles easily found in the U.S. and are a bit tangy. Jalepeno contain a moderate heat in comparison to habanero peppers, but is still too hot for me. They are also a bit sweet, similar to bell peppers. No-Bake Gluten Free Cheesecake and Crust (Dairy-Free Options)

I know you’re busy. We all are. So, not only can you take a break from complicated recipes, but a no bake one, too. This no bake gluten free cheesecake uses Pamela’s Products cookies in the crust. Though I have listed their Extreme Chocolate Mini Cookies, you can use any flavor you desire. You can spice it up with ginger snaps, chocolate chip or, chocolate chocolate chip. Get creative!

Lower-Fat Gluten Free Coleslaw

Memorial Day is coming up soon, and classic dishes like coleslaw are often served. Whether you are having a barbecue, a picnic, or just eating in, this gluten free coleslaw recipe will fit the menu well. It is lower in fat than most coleslaw recipes as I use a bit of fat-free/non-fat Greek yogurt to substitute some of the mayonnaise. If you are on a dairy-free diet, feel free to use plain dairy-free yogurt.
