Gluten Free Hot Cross Buns Recipe

Homemade Gluten Free Hot Cross Buns

Adapting my Whole Grain Gluten Free Dinner Rolls Recipe, enabled me to whip these gluten free hot cross buns up in no time. While the dough rose, I was able to make a delicious dinner. This gluten free hot cross buns recipe only takes about 10 minutes to bake. It all worked out perfectly and it can for you, too. These are so much less work than making Fluffy Gluten Free Cinnamon Rolls, though I enjoy those, as well.

Note: See the whole grain rolls recipe at the above link for a photo of the inside texture of these buns. Continue reading “Gluten Free Hot Cross Buns Recipe”

Single Serve Gluten Free Microwave Bread

Homemade Gluten Free Microwave Bread

Back in 2013, I created a Single Serve Dairy-Free Gluten-Free Yeast-Free Bread for Microwave. It tasted a bit too eggy, but was good in a pinch. I recently experimented with a dairy version using apple cider vinegar, a different flour blend, and omitted sugar or honey. It turned out much closer to the texture of starchy white bread like Wonder Bread. For a quick, single serve gluten free microwave bread recipe, it is pretty amazing. Gluten Free Honey Oat Bread Video (Machine or Oven)

Video of Making Gluten Free Oat Bread in a Bread Machine

I was asked to create a gluten free recipe video for an upcoming women’s health summit; however, it was postponed. Here is the first half of the video showing you how I make my Gluten Free Oat Bread Recipe in a Bread Machine (using sugar or honey). I hope this helps you in your gluten free baking. I list the bread machine model on the recipe page. Meanwhile, stay tuned for my gluten free naan video tomorrow.

Note: To make this recipe dairy-free, just omit the non-fat dry milk. You can also substitute the water with rice milk. To make this recipe oat-free, substitute the oat flour with sorghum flour and use 2 additional tablespoons of oil.

After you watch the video…

Gluten Free Indian Fry Bread (Navajo Flatbread)

Gluten Free Indian Fry Bread

Navajo fry bread was made by the Navajo Indians. Once other tribes began creating their own versions of the bread, it was known as Indian fry bread. Not all recipes for Indian fry bread contain yeast, but this version does. Some use cornmeal, while this one does not. I got the idea when a reader recently emailed me about how my gluten free pizza dough recipe (that you can make in a bread machine or not) turned out to be perfect for gluten free Indian fry bread. She doesn’t use a bread machine, but makes the dough by hand. You can do either. I have adjusted the recipe a bit if you just wish to try 1/3 of the pizza dough recipe. I used less egg white, a little more oil, a little more water, and a higher ratio of cornstarch for crispness. To my amazement, it was absolutely fabulous! I didn’t expect this Indian fry bread (actually a flatbread) to be appealing since it is a thicker dough than I am accustomed to using for what I consider American-Mexican food, but it was. Enjoy! Gluten Free Oatnut 3-Seed Bread Machine Recipe (or Oven)

Gluten Free Oatnut 3 Seed Bread for Bread Machine

Oat bread has always been my adult bread of choice. When I went gluten free, it was the bread I missed the most, next to sourdough. I’ve created a number of gluten free oat bread recipes. This one mimics Oroweat’s Oatnut 3 Seed Bread. They both contain the same seeds, but this one is minus the wheat flour and works with a bread machine that has a gluten free setting. I used the Breadman BK1050S. If your machine doesn’t have a gluten free setting, look for my other oat bread machine recipe at the above link. Enjoy. Gluten Free Pumpkin Cornbread (Dairy-Free Options)

Gluten Free Pumpkin Cornbread

Though I am allergic to pumpkin, whenever I get the craving for it, I create a new recipe and have my husband taste-test it. I have never had pumpkin cornbread before, but it sounded so good. To create this recipe, I began with my Gluten Free Cornbread for Stuffing and simply substituted the milk with pumpkin puree. My husband gobbled up a piece of this gluten free pumpkin cornbread and asked for more. He didn’t realize it was cornbread at first. Once he had a piece topped with his usual margarine, he said it was moist, with a typical cornbread flavor and texture, with a slight taste of pumpkin. Without the butter on top, he said it was a bit dry, like regular cornbread. He loved it, as I hope you will. Continue reading “Gluten Free Pumpkin Cornbread (Dairy-Free Options)”
