Gluten Free Lefse (Scandinavian or Norwegian Flatbread)

Lefse is a soft flatbread, similar to a tortilla. This gluten free lefse recipe is no different. It is often made of potatoes, however you may use gluten-free potato buds (see link below for a gluten free brand). There are many different versions of lefse. The Norwegian version is made of flour, usually potato, cream, sometimes lard, and cooked on a griddle. Special tools are usually used to make lefse, even gluten free lefse. Most people use a griddle, a rolling pin cover, and a lefse stick to turn them over. However, if you get creative you can make them with other tools and pans (see Tips section below.) When using fresh potatoes, you need to use a ricer. However, this recipe calls for Potato Buds instead of fresh potatoes. I know not everyone owns a ricer. I will publish a recipe for lefse made with fresh potatoes another day. Meanwhile, enjoy this recipe!

Grain-Free Gluten Free Bread with Almond Flour (Gum-Free)

One of my Facebook followers requested a gluten free paleo bread recipe with almond flour. Neither my husband or I are on a paleo diet, but it sounded wonderful. While many paleo dieters avoid yeast, other do consume it. This recipe is yeast-based. I will make another one in the near future using baking powder and/or baking soda for those who do not consume yeast. Meanwhile, this bread has a soft crust due to the psyllium husk powder, the texture enables you to fold the bread, and is truly delicious. Enjoy! They are much harder and crispier than Schar’s, but in gluten free bread sticks, this is a good thing. Crusty Multi-Grain Gluten Free Boule (Egg Free)

This gluten free boule has taken me four attempts to create. It is very tasty, has a hard, crunchy crust, and a wonderful texture. During my previous experiment, I only used 1/2 teaspoon of yeast and allowed the dough to rest for about 18 hours. It gave it a bit of sourdough flavor. You can experiment with this yourself. Meanwhile, enjoy this crusty gluten free boule. It tastes so good just with butter. I can’t wait to use it for spinach dip during the holidays and smaller versions for soups and chili. Most corn tortillas are made with masa harina which are treated with lime. Since I am allergic to lime (both citrus and the type used to treat masa), I created this gluten free corn tortilla recipe using cornmeal instead of masa harina. These gluten free buttermilk biscuits turned out amazing! Recently I developed a recipe for a substitute for Gluten Free Bisquick. While everyone really enjoys the recipe and has been raving about it, I found it a little too starchy. So, I improved upon the blend while creating this new gluten free buttermilk biscuits recipe. I used cornstarch as a base instead of potato starch and later added some additional potato starch. I was able to enjoy these biscuits without adding butter, straight from the oven. I have several different gluten free oat bread recipes, one for bread machines, one that is dairy free, and another that contains milk. However, because I am allergic to tapioca flour/starch, I created this oat bread recipe just for me, and others who are allergic to tapioca. Oat bread is my favorite gluten-free bread. It is flavorful, has a great texture, and is healthy for us. I hope you enjoy this recipe. Because it contains a little fava bean flour (which is not bitter), it rises high and makes it lighter. Thin Soft Gluten Free Wraps

These gluten free wraps are soft and pliable, and that’s not all. They are packed with protein. They fall somewhere between a tortilla and a crepe. Don’t allow the fava bean flour to scare you off, if you have tried other bean flours and they were bitter. Fava bean is very mild and not bitter at all. Combining beans with eggs boosts the nutrient values in the beans as eggs are a complete protein (contains all essential amino acids). This recipe is gum-free and grain-free.
