Gluten Free Frittata with Spinach Potato and Cheese

If you’re serving Easter brunch, this gluten free frittata would make an excellent addition to your menu. You may multiple the ingredients and make it in a large dish to feed a crowd. Some become confused with similar recipes such as a quiche or omelette. An omelette is folded, a quiche contains a crust, and a frittata is usually mixed up with the added ingredients. You may add meat, vegetables, cheese, pasta, potatoes and more to any of the above. They are delicious. I find a quiche to be more appealing, aesthetically, though you can create a very aesthetic frittata, as well. I provide the technique below. Enjoy! Gluten Free Crepes (Sweet or Savory)

Though I already have a Gluten Free Crepes Recipe, it is flourless and high protein. Today, after a Facebook fan requested a gluten free crepe recipe, I began to crave them myself. I wanted a traditional flour crepe; therefore, I used my gluten free all-purpose flour blend recipe. Though I suggest using a blender to make crepes, they can be made by whisking by hand. The use of a blender provides a smooth batter, so they will turn out perfectly.

In case you have never made crepes, I provide the instructions on how to swirl them in the pan, for a perfect crepe. Just note that sometimes your first crepe doesn’t turn out perfectly, just as in making pancakes. It allows you to adjust the temperature of the pan. Perhaps the first one will provide you a little snack to keep you satisfied until the others are done. Enjoy!

Gluten Free Apple Rings

In a mood for a healthier alternative to donuts? These gluten free apple rings may just fit the bill. Rather than starch filled donuts, these fritter-like rings are filled with the natural sweetness, nature intended. The batter is lighter and crunchier than my Gluten Free Fruit Fritters recipe; skipping the butter, milk, egg whites, and baking powder, and replacing all with sparkling water. Though the batter is thinner, it can be made thicker simply by adding an additional tablespoon or so of rice flour. Top them with powdered sugar or an apple cinnamon caramel sauce (recipe included). Gluten Free Apple Strudel

Again, I am honored to be able to create a gluten free recipe for KitchenAid. Today I present an amazing gluten free apple strudel, made with the new KitchenAid 13-Cup Food Processor with ExactSlice System. The strudel is absolutely amazing, as is the food processor! It’s right up there with my KitchenAid Stand Mixer. It has the ability to slice in 6 different thicknesses; works at 2 speeds; has 3 different sized openings to feed food items; comes with an adjustable slicing blade, as well as a shredder and dough blade (for yeast dough); is accompanied by several attachments, all in its own little carrying case/box. The best part…it has a separate chef bowl, with its own sized blade, which enables you to mix or prepare one food, while keeping the main bowl clean for your next food item. Heaven! When KitchenAid made this product, they read my mind! – and yours too, I bet.

Gluten Free Red Velvet Pancakes

Gluten Free Red Velvet Pancakes

I’ve been contemplating what new gluten free Valentines’ Day recipes to post in the coming days. I wanted to make some gluten free red velvet pancakes using buttermilk, but since I didn’t have any, I needed a substitute. You know how you can make homemade buttermilk by adding a tablespoon of apple cider vinegar (or white) to 1 cup of regular milk? Well, I decided to use some heavy whipping cream instead. The results? Absolutely amazing pancakes!

In essence, I made creme fraiche (soured cream), similar to buttermilk, but using cream.

Vinegar is always added to red velvet pancakes and baked goods because it masks the bitter flavor of artificial food coloring. No bitter taste, here! You could taste a slight hint of chocolate, and the rest just rich, moist, and a little sweet.

This recipe was adapted from Martha Stewart’s Hanukkah Sufganiyot Jelly Doughnuts. My intention was to develop a recipe for gluten free jelly donuts prior to Hanukkah, but unfortunately, work and caring for my elderly father caused a delayed. Sufganiyot, otherwise known as round jelly donuts are an Israeli delicacy associated with the miracle of the oil that burns in the Holy Temple in Jerusalem. For another way to use your leftover turkey and fixings, give this gluten free frittata recipe a try. Fritta is Italian meaning “to fry”. It is made with beaten egg and is fried. It often includes vegetables, or even meat. As a child my grandmother used to make the best artichoke frittatas. The more cheese the better! I created it with a bit of twist, as this one is not deep-dish, but no more higher than a pizza. I hope you enjoy this Italian favorite. Blueberry Sauce Using Powdered Sugar For Gluten Free Desserts

All blueberry sauce recipes may not be gluten free, but most are, provided you use a gluten free starch. Most blueberry sauce recipes call for starch, whether cornstarch, or possibly tapioca or potato starch in a gluten free blueberry sauce recipe. When using the recipe below, no starch is needed, as it is already included in the confectioner’s sugar (powdered sugar). Most powdered sugar you find in the supermarkets contain cornstarch. If you’re corn intolerant, or like to avoid GMO (genetically modified engineered) products, and you’re fortunate enough to live near a Trader Joe’s store, check out their Organic Powdered Sugar.
