Gluten Free Egg Foo Young

Egg foo young, also spelled egg foo yong, egg fu yung, egg fooyung, and egg furong, literally means “lots of eggs”. This gluten free egg foo young is prepared with eggs, vegetables, and meat or shellfish, if desired. You can add your favorite vegetables or traditional bean sprouts, bamboo shoots, sliced cabbage, or mushrooms, to name a few ideas. Water chestnuts or bamboo shoots add a delightful texture. What makes it distinctly different from frattata (its Italian cousin) is the sauce it is served with. What makes this an easy frittata recipe is that you can use leftover to make it right on your stovetop. One night during the week, make sweet potatoes and boiled sliced carrots for dinner, making some extra for this dish. Then in a day or two, use your extra carrots and sweet potato for this dish. Stovetop cooking is perfect for summertime or any time of the year. Enjoy this Americanized version of an Italian favorite. Every time I hit a milestone on how many Facebook followers I have, I ask my fans what gluten free recipe they would like me to create. Gluten free biscuits and gravy was one of the recipes requested. I asked the gentleman if you wanted white or brown gravy. He desired the white, southern-style gravy. I went one step further, and made a true southern gluten free biscuit and gravy recipe by adding sausage to the gravy. This is optional, or you can even use the vegan substitute I list below. I hope my southern readers, as well as others, appreciate this delicious recipe. Continue reading “Southern-Style Gluten Free Biscuits and Gravy (with Dairy-Free and Vegan Options)”

Gluten Free Blueberry Muffins with Streusel Topping (Sugar-Free)

Sugar-Free Gluten-Free Blueberry Muffins

If you are craving gluten free blueberry muffins, this sugar-free, or low-in-sugar, version is amazing! They turned out very light, despite not sifting the flour blend. I added 1-1/4 cups fresh blueberries, but you can easily get away with using 1 cup. We just love blueberries! The streusel topping really makes these tender and moist muffins! I hope you enjoy them. Read more below to learn about the sweetener that I used. Continue reading “Gluten Free Blueberry Muffins with Streusel Topping (Sugar-Free)”

Flaky Gluten Free Croissants

Image: Gluten Free Croissant

I put off developing a recipe for gluten free croissants for way too long. After multiple requests, here it is! I used my new gluten free phyllo dough recipe. Though it calls for superfine rice flour, I will be experimenting in the future with non superfine gluten free flours. I baked them after my husband went to bed one night and left 5 out, loosely covered. with a note stating to have as many as he’d like. I made them with tapioca flour/starch, which I am allergic to. (I had a couple anyways. Oh my!) When I woke up the next morning they were all gone. That night be kept raving them about them. I have never heard him enjoy anything, gluten free, more than these. And he still eats gluten! Meanwhile, I will continue to improve upon this recipe each time I make them. I hope you enjoy them as much we have. Continue reading “Flaky Gluten Free Croissants”
