Soft Gluten Free Garlic Naan – Oven-Baked or Stovetop

Oven-Baked Gluten Free Naan

Naan is the Indian version of flatbread. There are two versions, crisp/firm and the one I prefer, soft. The soft is to-die-for and is the only version I make! Everyone who has tried my skillet version raves about it. If you have a pizza stone, that version is even better! That’s all I make during the fall and winter. To avoid my kitchen from over-heating, I use the stovetop version during the summer months. Continue reading “Soft Gluten Free Garlic Naan – Oven-Baked or Stovetop”

Gluten Free Saigon Summer Rolls – Vietnamese Rolls with Peanut Sauce

Gluten Free Saigon Summer Rolls

While on vacation, we ate at one my favorite gluten free menu restaurants, PF Chang’s China Bistro. While this appetizer from their happy hour menu is not gluten free, allow me to explain why it’s not. The waitress spoke to the chef on my behalf. He said that the only reason why they don’t label it gluten free is because it is made on a grill that would pick of cross-contamination from gluten. Their peanut sauce may also contain gluten, but I didn’t ask. The appetizer is called Saigon Summer Rolls, also known as Vietnamese Rolls (Saigon is the former name of the current city, Ho Chi Minh City, in Vietnam.) Spicy Carrot Salad

Raw Spicy Carrot Salad`

Remember the old classic carrot and raisin salad? Well, this spicy carrot salad replaced that in our house a few years ago. The older we get, the spicier we enjoy our food. If you enjoy a little spice to your food, this is a must try. I like to keep some in the frig to use when I don’t have time to make a vegetable, usually weeknights. I hope you enjoy it as much as we have. Continue reading “Spicy Carrot Salad”

Honey Ginger Glazed Carrots

Honey Ginger Glazed Carrots

Are you tired of the same old vegetables? I sure am! When I created this recipe for ginger glazed carrots my first intention was to avoid granulated sugar. Before I knew it, I added ginger, but was sure if I was going to remove it or not after cooking. I didn’t remove the ginger slices and it added a bit of kick to my meal. I loved it! I’ll leave it up to you if you leave them in or not. Enjoy! Continue reading “Honey Ginger Glazed Carrots”
