These gluten free chicken nuggets are fast and easy to make. The great thing about them is that you bake them instead of deep-frying. This makes a healthier gluten-free dinner. Vegan Pumpkin Ice Cream
This is more of a sherbet than a vegan pumpkin ice cream, but is still extremely delicious for a diary free version. Since its development, I have discovered that adding one teaspoon of xanthan gum added to ice cream creates a more chewy texture. In this recipe you would need to mix about 1/2 teaspoon of gum with the oil. Note, that this is not a new recipe, but the original, published in 2010, seems to have vanished from this site. Enjoy! In this recipe, I have made them the traditional way, separating the egg yolks and whites. The whites are whipped until stiff and then folded into the batter at the end. Pumpkin Yeast-Risen Gluten Free Donuts (Picarones)
I have been wanting to make some yeast raised gluten free donuts, but was so excited when I discovered picarones. They are also risen donuts, but made with a sweet squash (pumpkin in this case) and sweet potatoes. They are also known as Peruvian donuts as they are popular in Peru. You can make these gluten free donuts using fresh or canned pumpkin. Just note that fresh pumpkin tends to vary in moisture and may not turn out the same. Meanwhile, enjoy these delightful treasures.
