Fork Tender Gluten Free Pork Ribs and Pulled Pork Recipe

You can serve these ribs as they are (boneless) or you can shred the meat and use it for a pulled pork sandwich because they are fork tender! You will not need a knife for these babies! I’d like to use the term “fall off the rib tender” but they are boneless. I enjoy pulled pork sandwiches with coleslaw atop a gluten-free roll and additional BBQ sauce. Since I am allergic to tomatoes I use my quick and easy homemade gluten-free chipotle sauce and Worcestershire sauce. You may consider using my homemade gluten-free barbecue sauce recipe that I created for my husband which is lower in sugar by using agave syrup and Worcestershire sauce instead of brown sugar. It’s very flavorful and has a hickory taste! Despite my tomato allergy, I couldn’t resist taste tasting the sauce while cooking! Oh, how I miss I good barbecue sauce!

Gluten Free Barbecue Sauce Recipe

Gluten Free Barbecue Sauce

Instead of using bottled sauce for my ribs I created a barbecue sauce recipe using agave syrup which is lower on the glycemic index. I used to make my mother’s old recipe, but she used brown sugar and ketchup. I adapted my mother’s recipe, but instead of using ketchup which is also full of sugar and salt, I used tomato paste. If you want a lower sodium sauce you can use low-sodium tomato paste. I added hickory smoke which gives it a great barbecue taste. I hope my husband enjoys this and you, too! Gluten Free Tender Pork Chops with Red Sauce and Rice

Gluten Free Pork Chops and Rice

If you like an occasional pork chop, but find them too dry, try my mother’s recipe. It’s naturally gluten-free. She used to call it, “Pork chop rice and gravy”. I like to call it that, too, but most people call it pork chop with red sauce. It is a very easy pork chop recipe with few ingredients. These are really tender pork chops. They are so tender you can break it up with a fork, especially the pork chops with a bone. Continue reading “Gluten Free Tender Pork Chops with Red Sauce and Rice”

Gluten Free Lentils and Italian Sausage

Nothing like a good lentils and Italian sausage recipe. Someone sent me a bunch of gluten-free sausages during the holidays which I had frozen. I had contemplated what I should cook with them. I ended up making an Italian dish that is customarily served on New Year’s Day, lentils and sausage, which symbolizes prosperity for the upcoming year. With added seasonings and vegetables, it turned out very tasty! I have to say, this is one of my new favorite Italian recipes. You could even add more broth and make it a soup! Gluten Free Chicken and Snow Peas

Image: Chicken Snow Peas and Carrots

I purchased some snow peas at the market today because I was craving stir fry. Snow peas are very nutritious. Check out their nutritional facts. I searched and searched online for a chicken and snow peas recipes, but every recipe I came across called for ingredients that I did not have on hand. I had no rice vinegar, no fresh ginger, no apricot preserves, no cashews, no water chestnuts, no bamboo shoots, no peanut oil, no sesame oil, no almond flavored liqueur and no mushrooms. I got creative instead! My husband and I really enjoyed this dish. I use chicken breasts instead of whole chicken parts for lower fat content. This recipe has a slight hint of peanut, sweetness and tang, just in the right proportions. Some stir fry recipes just do not have enough sauce, in my opinion. To me, there is nothing worse than have a bunch of dry rice left to eat. I believe this one has the perfect amount of sauce. Try it and let me know what you think! Gluten Free Raw Fudge

Gluten Free Raw Fudge

After watching this video recipe on Raspberry Ganache Fudge Cake I have been wanting to try it. Unfortunately, I had no avocado for the frosting, nor raspberries for the filling. Darn! I tried a different spin on things and made a smaller portion of what I really would like to call “guilt-free” raw fudge. This raw fudge makes a great dessert, as well as a snack, and is also low-sodium, low-fat, vegan, gluten-free and dairy-free dessert. And healthy, too! Continue reading “Gluten Free Raw Fudge”
