Nothing like a good lentils and Italian sausage recipe. Someone sent me a bunch of gluten-free sausages during the holidays which I had frozen. I had contemplated what I should cook with them. I ended up making an Italian dish that is customarily served on New Year’s Day, lentils and sausage, which symbolizes prosperity for the upcoming year. With added seasonings and vegetables, it turned out very tasty! I have to say, this is one of my new favorite Italian recipes. You could even add more broth and make it a soup!
Lentils and sausage stew is a a traditional Italian New Year's recipe; comforting and flavorful.
Ingredients:
- 1 -1/2 pounds gluten free sausage (New York Style or other brand)
- l pound lentils, rinsed
- 4 cups water
- 1 cups dry white wine
- 3 cups low sodium chicken stock
- 1 large green bell pepper, chopped
- 2 cloves garlic, chopped
- 1 medium onion, chopped
- carrots, sliced for crunchy, or diced for tender (about 14 baby carrots)
- 2 stalks celery, diced
- 2 bay leaves
- 1 teaspoon dried rosemary
- 1/2 teaspoon dried basil
- Fine sea salt and fresh ground pepper, to taste
- Parmesan cheese, grated (optional)
Instructions:
- Cook and brown link sausages.
- Drain on paper towels; pat top with paper towels; and set aside.
- Add rinsed lentils, water, chicken broth and wine to large pot.
- Add all other ingredients to pot.
- Cut sausages in little circles and to pot.
- Cook for about 1 hour.
- If there is too much liquid cook on medium high until desired consistency is achieved.
- Top with parmesan cheese, if desired.
