Gluten Free Lentil Soup with Bacon

Gluten Free Lentil Soup with Bacon

Stop the presses! This is my all time favorite out of all of my gluten free soup recipes! I love anything with bacon, but try to not eat it too often, as most of them contain many preservatives, not to mention the calories. I am having overnight company in about a week and decided to make my famous lentil bacon soup. Kids love it as well as adults. Who doesn’t like bacon, right? I am sure they exist, but it is as many who do not like chocolate. Continue reading “Gluten Free Lentil Soup with Bacon”

Gluten Free Avocado Chicken Salad

Avocado Chicken Salad

I love avocados and I thought, “Why not mix it up with chicken for an avocado chicken salad sandwich or atop a salad?” I allow myself a serving of avocado once a week, as a treat. Adding a little Greek yogurt makes this recipe even less in calories, or use mayonnaise for richness, or neither. This is a quick, easy avocado chicken salad recipe that anyone can make. And it’s great for using up leftover chicken. You’ll see the sandwich photo below which shows the dairy-free version, and the salad photo showing the dairy version Continue reading “Gluten Free Avocado Chicken Salad”

Low Fat Healthy Baked French Fries

Low Fat Baked French Fries

Let’s face it french fries that have been deep fried are high in calories. If you’d like a french fry lower in fat and calories just bake them. I’m all for low fat french fries! I recently purchased a Nonstick French Fry Baking Pan which allows the heat to rise form the bottom through holes in the pan, allowing browning to occur on both sides. A little olive oil spray makes them taste like regular french fries. UPDATE: I have successfully made these using a regular baking sheet. You may use russet potatoes, sweet potatoes, or golden or red potatoes. Guilt free French fries! What’s not to enjoy? Continue reading “Low Fat Healthy Baked French Fries”

Gluten Free Pastry Recipe: Apple or Desired Filling

Gluten Free Apple Pastry - Sugar Sprinkled

I like baking with red apples as it allows me to use less sugar in a recipe. I created a gluten free pastry recipe with red apples versus green. You can use any apples you desire and adjust the sugar content accordingly. I used my gluten free old cream puff shell recipe but made the shells more shallow. You can fill these pastries with anything you desire: homemade fruit fillings, custard, Comstock pie fillings, and more. Bon Appetité! Dairy Free Sherbet – Ice Cream – Mango and Almond

Dairy Free Mango Sherbet

This recipe is dairy free. I had a nice ripe mango waiting for me, but I was in the mood something more creamy. The raw almond milk ice cream that I made with avocado came out wonderful, but raw almond milk ice cream with mango is very refreshing and so healthy, too! I wasn’t sure to call it dairy free sherbet or ice cream, but it tastes great! Next time I am definitely skipping the sweetener and adding bananas! Gluten Free Maple Rice Pudding Recipe

Maple Sweetened Gluten Free Rice Pudding

I had quite a bit of leftover white rice and happened to see a restaurant featured on television that shared a portion of their ingredients for rice pudding except for one secret ingredient. And it is naturally gluten free. It looked as if it contained warm maple syrup; and the host of show said it tasted like french toast. I just had to try to make it. The original recipe did not use vanilla bean but I had to add some, as vanilla beans give it a wonderful flavor! I hope you enjoy this as much as I enjoyed creating, and consuming it. Gluten Free Cranberry Coffee Cake Recipe from Namaste Mix

Gluten Free Coffee Cake

I was sent a couple of items from Namaste Foods to sample. The one I recently tried was their Biscuits, Pie Crust and More! Flour Blend which also makes dumplings, shortcake and coffee cake. The package had several recipes including an orange cranberry coffee cake recipe. Unfortunately, I am allergic to citrus and had to substitute the orange juice for applesauce and added more cinnamon (yum!) – very moist! I have included my recipe along with the recommended ingredients and instructions (see “versus…”). I recommend this mix, as it is close to Bisquick and I bet will make some very good recipes besides this one. I can’t wait to try the pie crust! The coffee cake rose beautifully, even with all of that heavy applesauce! This recipe is gluten-free, casein free, (egg-free if you use an egg substitute), and (nut free, if you skip the walnuts on top). The Secret to a Good Salad – Plus Chipotle Tex Mex Dressing

Chopped Salad and Tex Mex Salad Dressing

Summer time is almost here which calls for the need of multiple salad recipes. To make a successful chopped salad you want to use lots of color and make sure you use dry lettuce. You can use whatever you have on hand. I have listed some very colorful options below. I also included a very easy chipotle salad dressing (tex mex salad dressing, if you wish) to go with this chopped salad recipe, but of course you can use your favorite salad dressing. Enjoy! Gluten Free Balsamic Reduction – Balsamic Drizzle Recipe

Image: Gluten Free Balsamic Reduction - Drizzle

This balsamic glaze flavors and dresses up just about any every day dish, from meat to vegetables to potatoes and rice dishes. You can make a double batch and keep it on your kitchen counter for future uses. I do not like the idea of using sugar on a dinner dish, but when I have guests that are not on a restricted diet I make an exception by making a balsamic reduction. Perhaps you will give this balsamic drizzle a try, too. Enjoy! My guests do! Continue reading “Gluten Free Balsamic Reduction – Balsamic Drizzle Recipe”
