Using shrimp, pork, and/or beef, you can make these gluten free siu mai, open-top dumplings. Called shaomai in Japan and siomai in the Philippines with slight variations, they are often served at dim sum (Chinese-style brunches where they serve several small appetizers). Elsewhere, they are served as appetizers as well as meals. Gluten Free Apple Crumb Coffee Cake
While staying at the all-inclusive Hyatt Zilara in Cancun, Mexico last week, their bakery served these little gluten free apple coffee cakes with streusel topping. I absolutely fell in love with them! It was so nice to have a few gluten free treats. I created a duplicate recipe for you. Of course, I made the lower-fat version after indulging so much on vacation. In the cake, I used mainly dairy-free margarine and non-fat Greek yogurt instead of butter and sour cream. Enjoy! I noticed that Slice Pizzeria, a restaurant in New Orleans, uses King Arthur Gluten Free Bread and Pizza Mix to make their pizza crusts. So, I got to work and created a copycat King Arthur Gluten Free Bread and Pizza Mix recipe. Make this mix at a fraction of the cost of its original, which goes for about $7 per box plus shipping and $27 for a pack of 3 on Amazon. Each box makes one bread or two 12 – 14-inch pizza crusts. Gluten Free Southern Pecan Pound Cake – Bundt Cake (Low-Fat or Not)
This wonderful southern pecan pound cake is made less fattening by two simple changes without sacrificing on moisture and flavor. Of course, you can make the full-fat version as well. I made it low dairy, but you can make it completely dairy free without using hard to find ingredients. My gluten-eating neighbor gave it a smiley face, three hand claps, and a thumbs up.
