If you’re looking for a small batch gluten free puff pastry, this recipe is perfect to use as a base for up to 12-inch round pans or about 4 Danish pastries. When baked in a 9-1/2-inch springform pan, it will shrink about 1-1/2 inches. This small batch recipe is one-quarter of the recipe that you will find here. In addition, I’ve added a new ingredient substitute that will help prevent sogginess in cakes where this pastry is used as a base. This is especially useful for desserts filled with custard. Gluten Free Pumpkin Biscotti (or Sweet Potato) (Dairy Free)
My grandmother and mother used to make biscotti (Italian cookies), but I never enjoyed them until I made my own, gluten free, of course! These gluten free pumpkin biscotti may be filled with dried fruit and/or nuts, or not. Did I hear, “Amazing”? Why, yes, I did! Use pumpkin puree or pureed sweet potatoes. Either way, they’re delicious! Nuts and dried fruit are optional. You can even dip them in melted chocolate.

High Protein Gluten Free Bread (Machine or Oven)
If you’re looking for high protein gluten free bread that is soft and provides options for sweeteners such as sugar, honey, molasses, or maple syrup, this is the bread for you! I boosted the protein with seeds that are the highest level, providing an additional gram of protein per slice when compared to my oat bread recipe. Oat is the highest protein gluten free flour other than ground nuts.
