Try adding a little sugar-free chocolate ganache/syrup. I hope you do too. Continue reading “Wink Frozen Desserts Strawberry Copycat Recipe (100 Calories and 4 Net Carbs Per Pint)”

Gluten Free French Beignets – Light and Airy New Orleans Donuts

Light and Airy Gluten Free Beignets

This recipe is nothing like Yeast-Based Gluten Free Beignets (the ones that are popular in New Orleans, usually made from biscuit dough). Instead, they are Gluten Free French Beignets, popular in France. This dough creates light and airy pastries that have a marshmallow-like texture inside the shell, similar to churros. I don’t know anyone who would stop at just one. They’re just so light! Continue reading “Gluten Free French Beignets – Light and Airy New Orleans Donuts”

Gluten Free Craquelin Cream Puffs (with Dairy-Free Options)

Gluten Free Craquelin Topped Cream Puffs
Walking the streets of France, you’ll no doubt run into a bakery or two that offers cream puffs topped with cracked sugar. That’s exactly what I offer you here, except they’re gluten free, of course. Gluten free craquelin cream puffs are no different than their gluten counterpart. They are a delight. Once you have them, you may never make standard cream puffs again.

Sugar Free Dairy Free Chocolate & Chocolate Ganache (Gluten-Free)

Collage of Melted Sugar Free Dairy Free Chocolate Ganache and Gluten Free Crackers
This homemade sugar free dairy free chocolate or chocolate ganache recipe is delicious! You can use the sweetener of choice as long as it’s not full of fiber. While it contains coconut milk, it does not taste like coconut at all. Chocolate masks coconut flavors. The thinner you make this chocolate, the more uses open up to you. Without any thinning, you can mold into any shapes you desire. If you thin it out a little, you can use it to spread over crackers like I did in the photo. I swear they tasted like chocolate covered pretzels with seeds. (I used Crunchmaster Multi-Grain Crackers.) You can even use this recipe as a filling or topping for desserts or my newest Gluten Free Dairy Free Cream Puffs Recipe and others.)

Gluten Free Dairy Free Cream Puffs - Profiteroles

Gluten Free Dairy Free Cream Puffs Baked to Culinary Perfection

I’m teaching a gluten free culinary class and needed a gluten free dairy free cream puffs recipe that was up to culinary standards. This is it! It took several attempts, but these are light and hallow, perfectly browned, and have a wonderful flavor, almost flavorless. This recipe does not contain coconut oil, coconut milk, nor dairy free margarine or spread. I use my Homemade Gluten Free Flour Blend (no Expandex or gelatin.)

Gluten Free Lemon Meringue Pie with Italian Meringue + 4 How to Videos

Sliced Gluten Free Lemon Meringue Pie

In an effort to show baking class students how to bake using eggs, a gluten free lemon meringue pie recipe was a must. Instead of using the starch-free recipe for lemon curd filling, I developed this richer recipe. It is irresistible. You have four pie crust recipes from which to choose as well as two fillings. The meringue is nice and sturdy. Be sure to watch the four instructional videos too. Continue reading “Gluten Free Lemon Meringue Pie with Italian Meringue + 4 How to Videos”
