While I have a few gluten free cake mug recipes, I had not yet developed a muffin in a mug recipe yet. Wanting a bit healthier version of the cake mug recipe, I decided to add a bit of flax seed meal to the cake recipe and add some blueberries. Whoever thought you could make a gluten free microwave cheesecake? You can! Though this is one of those recipes that varies per microwave and per your tastes. However, when you’re craving something sweet and want to make dessert for one, this may work for you. We love it in our house! It’s a bit pastier than a traditional cheesecake, but with my homemade graham cracker crumbs and your favorite cheesecake topping, it’s scrumptious. I had my recipe testers for my upcoming cookbook test this recipe. The majority of the testers enjoyed it. Some had to adjust the cooking times or temperature. Here is another fun gluten free Memorial Day, 4th of July, or Labor Day dessert recipe. This recipe creates moist, fluffy, and rich cake in red, white and blue. It’s so good, it doesn’t need frosting! However, you can omit the food coloring and make solid, white cupcakes. This is the richest gluten feee cake I have ever made!
