Douglas McNish makes a mean Raw Vegan Gluten Free Cheesecake. I started with his recipe and by the time I was finished, it developed into this lovely raw pumpkin cheesecake recipe. You will need a high speed blender to make this. There is no getting around it. If you are not fortunate enough to own one, note that there are lower cost alternatives to the VitaMix brand. A gluten free pumpkin pie recipe with a traditional filling. The use of both granulated sugar and brown sugar create a caramelized flavor that is hard to resist. Top it with homemade whipped cream or a gluten free ready-made brand such as Cabot. For a dairy-free topping, try the crunchy praline topping. Gluten Free Butter Cookies (French Sablés)

These gluten free butter cookies are named “sables” after the town in which they were first made in 1670, Sablé-sur-Sarthe, a town in West France. The word means “sand” which is fitting of these cookies as they are tender and have soft crumbs that crumble easily. They are also known as “sand butter” cookies. Generally you make them without eggs, but if you prefer, you may make them with heavy cream. Roll out and cut the dough. You can even sandwich them with your desired filling. However, the dough may simply be sliced and baked. Sables compliment custards, poached fruit, and other moist desserts, similar to biscotti. Do you need to feed a crowd where the typical size cheesecake just isn’t enough? This gluten free cheesecake is made in a 13 x 9-inch dish and cuts up into bars quite nicely. Rather than having to make homemade gluten free graham crackers, you make and pre-bake the crust all in one step. Use strawberry jam or make homemade agave jam (recipe linked below). Triple Chocolate Gluten Free Pumpkin Cheesecake & Crust

This is the best dessert I could possibly think of serving on Thanksgiving out of all of my gluten free dessert recipes. It not only fits in perfectly with the holiday, but it contains tons of chocolate. The filling contains white chocolate, cream cheese, and pumpkin puree. The crust of this gluten free pumpkin cheesecake is is made of chocolate cookies and is covered with a thin layer of pumpkin chocolate ganache. I took a shortcut by using Pamela’s Products mini chocolate cookies for the crust. They really are ideal. This recipe has received rave reviews, even by gluten-eaters.
