TheĀ recipe forĀ this gluten free rainbow cake is also dairy-free. Of course, you will need to use a dairy-free frosting or dairy-free whipped cream (which I do not list below). This cake is great for kids’ parties or to brighten up anyone’s day. The cake is a sponge cake which makes the perfect cake to use with whipped cream. This cake makes a great St. Patrick’s Day recipe because, you know…the pot of gold at the end of the rainbow. Continue reading “Gluten Free Rainbow Cake”

Moist gluten free apple muffins anyone would surely enjoy, even your gluten-eating friends and family members. If you already have a batch of Carla’s Gluten Free All-Purpose Flour Blend Recipe already made up, they are fairly simple to make. This particular recipe should turn out well with any gluten-free all-purpose flour blend. However, my flour blend recipe contains superfine rice flours which are very close to gluten all-purpose flour. I hope you enjoy them as much as I did. Gluten Free Blueberry Coffee Cake

Image: Gluten Free Blueberry Coffee Cake

This gluten free blueberry coffee cake may be made three different ways. You can use canned blueberry pie filling and layer it as seen in the photo below and add an optional glaze. You can use fresh or frozen blueberries and fold them into the batter. Lastly, once you fold the blueberries into the batter you can top it with the streusel topping recipe I have supplied below.Ā I chose the quickest method, pie filling, and it was delicious. Enjoy this blueberry coffee cake, no matter how you assemble it. I have included instructions on how to bake it in a 9-inch round pan, 9 x 9-inch square pan, or see the tips section for making a larger one in a 9 x 13-inch pan. Starch-Free Gum-Free Leavener-Free Gluten Free Cake Recipe

Image: Gluten Free Cake Without Starch and Gums

I am aware that many individuals on a gluten free diet are watching their intake of starch. In addition, some individuals have trouble with gums. This gluten free cake recipe is free of all starch (potato, tapioca, arrowroot, and cornstarch) and gums (xanthan, guar, etc). It is also free of leaveners such as baking soda and baking powder. Obviously, the cake still calls for sugar, which is still high in carbohydrates, but you save a ton of carbs and have added protein from the eggs in this gluten free cake recipe. It is light due to the whipped egg whites that are folded in towards the end. I’m not keen on using rice flour in cakes because it is usually gritty, unless it is a superfine rice flour. For those who Ā still use it, enjoy! Continue reading “Starch-Free Gum-Free Leavener-Free Gluten Free Cake Recipe”

Dairy Free Gluten Free Brownies Recipe – Rocky Road Style

Image: Dariy Free Gluten Free Brownies

This gluten free brownies recipe contains marshmallows and walnuts like any rocky road dessert. The marshmallows melt into the batter while it bakes, creating a lighter, almost cake-like texture, but chewier. Once in awhile you’ll get a taste of the marshmallows, which is the characteristic my husband most enjoyed.Ā For a heavier brownie, just cut the baking soda in half. Gourmet Fresh Gluten Free Peach Crisp

Image: Gluten Free Peach Crisp

This gluten free peach crisp is awesome! It calls for plenty of butter in order to make the topping nice and crispy. If you are wondering what theĀ difference between a cobbler and a crisp is, a cobbler is made with a dough batter, similar to biscuit dough. A crisp is usually made with flour, brown sugar, cinnamon, and butter. A crisp has a crumbly topping. Cobbler got its name because the biscuit dough is usually dropped in pieces, creating a cobblestone affect. Meanwhile, enjoy this gluten free peach crisp. Be creative and add your favorite ingredients – perhaps a bit of fresh ginger to bring on a little heat. Continue reading “Gourmet Fresh Gluten Free Peach Crisp”

I have had several requests for healthy gluten free recipes. With summertime here, I thought those of you with children would appreciate some ideas for healthy gluten free snacks. Ā I remember when I first began my gluten free diet in 2005, I tried a rice cake, and could barely finish it. It was so dry and tasteless. I resorted to snacking on watermelon instead. Things have changed, but I have learned different ways to consume rice cakes. When making these chocolate covered rice cakes, be sure to use a gluten free brand of rice cakes if you are gluten intolerant. I have listed one brand below. Gluten Free Shortbread Cookies Neapolitan-Style

Since it is summertime and the kids are on vacation, I though you’d appreciate colorful gluten free shortbread cookies. They are flavored in vanilla, almond, and chocolate, but you can choose other flavors and colors if you desire. Neapolitan is an Italian favorite, just like the ice cream. They are buttery, have just a little chew, and they have a little crunch. Enjoy!
