Crepes are a thin, moist pancake, and usually richer due to added butter. However, this gluten free crepes recipe may be made with healthier by using margarine, dairy free spread, and dairy free milk, if desired. For darker crepes, use Dutch processed cocoa (Rodelle brand is gluten free). It is not acidic like pure cocoa powder. Meanwhile, enjoy these gluten free chocolate crepes. Gluten Free Ice Cream Sandwiches

My quest to develop a gluten free ice cream sandwich took much more time than I expected. I first tried to adapt my own moist Gluten-Free Dairy-Free Chocolate Cake recipe. I just left out the leaveners. However, it turned out very gummy and too chewy. In my search to adapt a gluten ice cream sandwich recipe, all recipes fell short of my expectations by viewing their photos. I couldn’t even turn to Martha Stewart or Joy of Baking, two of my favorite cooking sites. Continue reading “Gluten Free Ice Cream Sandwiches”

Gluten Free Chocolate Ice Cream Recipe (or Rocky Road)

Image: Gluten Free Chocolate Ice Cream

Sunday, July 21 is National Ice Cream Day. I am mid perfecting a gluten free ice cream sandwich recipe and have been experimenting with a new gluten free chocolate ice cream recipe. I have made chocolate ice cream with a bit of xanthan gum, but this one turned out the best so far. Adding gum to homemade ice cream helps prevent crystals from forming and it provides a bit of chew. Using additional cream also helps prevent ice crystals and hard ice cream. There’s nothing worse than hard homemade ice cream. Enjoy! Gluten Free Peach Pie

After receiving several requests for a gluten free peach pie recipe, I developed this recipe. My favorite way to serve is cold after firming it up in the refrigerator for a few minutes. This prevents the juice from running out. But sometimes you just can’t wait! I did this! I actually enjoyed it both ways, but it makes for a nicer presentation once firm. I’m sure you’ll enjoy this recipe. I used my new flaky gluten free pie crust recipe. For those who do not use my gluten free all-purpose flour recipe blend, you’ll be happy to know that superfine rice flour is not needed for the crust. Enjoy! Continue reading “Gluten Free Peach Pie”

Flaky Gluten Free Pie Crust Recipe (Pâté Brisée)

Flaky Gluten Free Crust Filled with Beef

Many of my Facebook followers have requested that I develop a gluten free pie crust recipe that does not call for superfine rice flour. This one turned out flakier than any other pie crust on this site. I have used it to make mini gluten free chicken pot pies, regular size, as well as a gluten free peach pie. They all turned out delicious. You will find that refrigerating the dough once rolled makes transferring the rolled out dough to the pie much easier. I have included that tip as well as another for ease in transferring the dough. Meanwhile, I hope you enjoy this recipe for many of your savory and sweet gluten free pies.
