Braided Gluten Free Easter Bread Dough

It is an Italian tradition to make an Easter bread, which is usually on the sweet side. This gluten free Easter bread recipe is slightly sweet, but not very. Feel free to add additional sugar, if desired. I provide you with instructions on how to color your eggs using simple food coloring to the choices of braiding or twisting the dough. Make one large loaf to use as center piece or make mini versions for several tables if you have a large group to feed. Either way, I hope you and your family enjoy this festive treat! Gluten Free Crepes (Sweet or Savory)

Though I already have a Gluten Free Crepes Recipe, it is flourless and high protein. Today, after a Facebook fan requested a gluten free crepe recipe, I began to crave them myself. I wanted a traditional flour crepe; therefore, I used my gluten free all-purpose flour blend recipe. Though I suggest using a blender to make crepes, they can be made by whisking by hand. The use of a blender provides a smooth batter, so they will turn out perfectly.

In case you have never made crepes, I provide the instructions on how to swirl them in the pan, for a perfect crepe. Just note that sometimes your first crepe doesn’t turn out perfectly, just as in making pancakes. It allows you to adjust the temperature of the pan. Perhaps the first one will provide you a little snack to keep you satisfied until the others are done. Enjoy!

Gluten Free Graham Cracker Crust with Flax

Instead of relying on commercially made graham crackers, you can whip up this gluten free graham cracker crust all in one step. Adding flax seed meal not only provides additional fiber and nutrition, but it makes this crust moist. The nutritional value is tri-fold: fiber, the same healing ingredient found in aloe vera, and omega 3s. Brown flax seeds are higher than the golden variety, but it’s all up to you which one you use. Gluten Free Banana Cream Pie with Several Crust Choices

National Banana Cream Pie Day was a few days ago, and it got me thinking. Creating a gluten free banana cream pie recipe wasn’t high on my list of to-do’s, but I became intrigued, and that was that. Before you knew it, I was surveying my Facebook friends on what types of crust they would enjoy. The 2 highest voted for were graham cracker, graham cracker coated with chocolate, and regular coated with chocolate. Since I already had all of those Gluten Free Pie Crust Recipes on this website, I decided to go for a shortbread crust for my own. I include links to some of my gluten free pie crust recipes below, and even the chocolate ganache coating. You may garnish the pie with whipped cream, meringue, or leave plain. Perhaps some shredded coconut would do well for some people. I hope you enjoy this recipe. I hadn’t had a banana cream pie in decades and being a pastry cream lover, it’s hard to believe. I don’t know about you, but I have been consuming way too much rice lately…rice pasta, rice flour in baked goods, rice as side dishes, and more. I thought you would appreciate more gluten free potato sides dishes, and this easy potato salad recipe is so fast to make if you use a microwave. This recipe is especially great to make for one individual or multiply to feed a crowd. If you desire, you can make this recipe much richer by substituting mayonnaise or sour cream for the olive oil. Gluten Free Apple Strudel

Again, I am honored to be able to create a gluten free recipe for KitchenAid. Today I present an amazing gluten free apple strudel, made with the new KitchenAid 13-Cup Food Processor with ExactSlice System. The strudel is absolutely amazing, as is the food processor! It’s right up there with my KitchenAid Stand Mixer. It has the ability to slice in 6 different thicknesses; works at 2 speeds; has 3 different sized openings to feed food items; comes with an adjustable slicing blade, as well as a shredder and dough blade (for yeast dough); is accompanied by several attachments, all in its own little carrying case/box. The best part…it has a separate chef bowl, with its own sized blade, which enables you to mix or prepare one food, while keeping the main bowl clean for your next food item. Heaven! When KitchenAid made this product, they read my mind! – and yours too, I bet.

Meringue Cake – Pavlova (Naturally Gluten Free)

Pavlova is an Australian and New Zealand dessert that it is made primarily with egg whites. It is a naturally gluten free meringue cake, has a delicate, crisp crust on the outside, and a soft marshmallow texture inside, created by the addition of vinegar. You may top the meringue cake with sweetened whipped cream, a mixture of whipped cream and yogurt, or a Bavarian cream, which is a mixture of whipped cream and custard (my favorite). Gluten Free Soft Pretzels

I have been wanting to create a recipe for gluten free soft pretzels for some time, now, but I had read that some had trouble with coarse Kosher salt melting. Not wanting to take the chance, I waited until I found some pretzel salt online. I think it makes a big difference in taste and appearance, as pretzel salt is very white, almost powdery. After finding that even professional bakers have trouble making the perfect pretzel, brown and shiny, I discovered what works the best to achieve this.
