Caramel Gluten Free Cheesecake with Almond Graham Crust

Cheesecake is one of my favorite desserts. However, I’ve been getting a bit more creative as you can just make so many of the same old gluten free cheesecake recipes before you get bored with them. I’m always looking for something different and ran across a Caramel Cheesecake Recipe on the BBC’s website. Though all of the ingredients were listed by weight since the BBC is in Europe, I weighed all of the ingredients and converted into cups for you and made a little change. I hope you enjoy this recipe. Continue reading “Caramel Gluten Free Cheesecake with Almond Graham Crust”

Butternut Squash Gluten Free Ravioli with Creamy Garlic Sauce

Image: Gluten Free Butternut Squash Ravioli

I absolutely adore Pasta Prima’s Gluten Free Butternut Squash Ravioli, however, now that I realize I am allergic to tapioca I cannot have them. So, to the drawing board I went and the results were nothing but spectacular! Making homemade gluten free ravioli is definitely a weekend project for those who work, but you can also make the filling a couple of days in advance. My husband enjoyed his with my Italian Spaghetti Sauce and I used the creamy garlic sauce (recipe provided below). I hope you enjoy these gluten free ravioli, as well. They are definitely a treat! Gluten Free White Cake Recipe [Now redirects to Wedding Cake Recipe]

Image: Gluten Free White Cake

I thoroughly enjoyed creating this gluten free white cake recipe as it is so easy to handle when inverting. It is due its many egg whites, which also makes it moist, along with its butter and sugar. You can use your favorite fillings and frosting from fruit purees to sweetened whipped cream and chocolate ganache to fluffy white frosting, or chunks of fruit within the whipped cream. Make it easy on yourself and use canned fruit such as peaches. Get creative! What will you use for your gluten free white cake? Share your ideas in a comment below.

UPDATE: I NEED TO REMAKE THIS CAKE. THERE MUST BE A MISTAKE IN THE INGREDIENT AMOUNT(S) SOMEWHERE, AS TOO MANY PEOPLE HAVE COMPLAINED ABOUT THE RESULTS. I AM SO SORRY.

Gluten Free Ham Recipes from Leftovers

Image: Gluten Free Macaroni Cheese, Ham and Sour Cream

I thought since many of you served ham on Easter you would appreciate having some gluten free ham recipes to use up your leftover ham. They include breakfast to dinner and casseroles to empanadas. While many of these dishes contain cheese they can easily be made dairy-free and vegan by using dairy-free substitute cheese. Just be sure to use a gluten free brand. My favorite brand is Follow Your Heart. If you cannot locate this brand try the Daiya brand. It’s my next favorite. My favorite brand of gluten free pasta is Barilla and Jovial Egg Pasta.

Meanwhile, I hope you had a wonderful holiday with family and/or friends.

Gluten Free Ham Glaze – Honey Mustard

Image: Gluten Free Glazed Ham

If you’ve tried other gluten free recipes for glazed ham and were not satisfied, you may find this gluten free ham glaze recipe just up your alley. It is a bit different than others, as it contains apple cider vinegar for a slightly tangier zing. However, it contains plenty of honey for sweetness, and a tab of butter to brown your ham well. I hope you all have a wonderful Easter holiday! ~ Carla

Gluten Free Zabaglione with Raspberries and Biscotti

Image: Gluten Free Zabaglione

Known by different names in different parts of the world, this custard sauce is called zabaglione in Italian. It is a thin custard flavored with a bit of sweet wine, usually Marsala, and is typically served atop fruit. You may, however, serve this sauce over a pastry or any dessert dish you desire. It is traditionally served with biscotti, an Italian cookie. Being half Italian, I had never tried zabaglione, less than gluten free zabaglione. I hope you enjoy it as much as I did. Gluten Free Frittata with Spinach Potato and Cheese

Image: Spinach Potato Frittata

If you’re serving Easter brunch, this gluten free frittata would make an excellent addition to your menu. You may multiple the ingredients and make it in a large dish to feed a crowd. Some become confused with similar recipes such as a quiche or omelette. An omelette is folded, a quiche contains a crust, and a frittata is usually mixed up with the added ingredients. You may add meat, vegetables, cheese, pasta, potatoes and more to any of the above. They are delicious. I find a quiche to be more appealing, aesthetically, though you can create a very aesthetic frittata, as well. I provide the technique below. Enjoy! Gluten Free Waldorf Salad

I thought you’d appreciate a choice of a different salad for your Easter dinner. Apples are always refreshing, and the well known waldorf salad is always a bit hit. It was created by a chef at the old Waldorf Hotel, which later became the Waldorf-Astoria Hotel. I have written this recipe so that you may control the amount of dressing used. Add as little or as much lettuce as you desire. Some individuals enjoy their waldorf salad heavily coated with dressing, while others only like a tad bit of dressing. If you decide to use yogurt to make a gluten free waldorf salad, ensure your yogurt is gluten free. Meanwhile, if you haven’t ever tried one, now’s the time. You can impress your guests with very little effort. Continue reading “Gluten Free Waldorf Salad”

Gluten Free Angel Food Cake

Gluten Free Angel Food Cake

Cake flour is used in angel food cakes because it contains low protein, which means less gluten. This makes baking a gluten free angel food cake ideal! Because cake flour is a finer texture than regular wheat flour, it is extremely important that you use a superfine gluten free flour for this recipe. I used my Gluten Free All-Purpose Flour Blend, which is made up of superfine white rice flour. You’ll find the link below. I use it in most of my baking recipes. However, I did not use my Gluten Free Cake Flour Blend recipe in this cake, as it contains leaveners such as baking soda and baking powder, which you do not want to add to an angel food cake. Angel food cake uses egg whites as the leavener, and a bit of cream of tartar to stabilize the egg whites and prevent them from drying out.  It contains no fat, making this an ideal dessert for waistline watchers!
