Gluten Free Angel Food Cake

Cake flour is used in angel food cakes because it contains low protein, which means less gluten. This makes baking a gluten free angel food cake ideal! Because cake flour is a finer texture than regular wheat flour, it is extremely important that you use a superfine gluten free flour for this recipe. I used my Gluten Free All-Purpose Flour Blend, which is made up of superfine white rice flour. You’ll find the link below. I use it in most of my baking recipes. However, I did not use my Gluten Free Cake Flour Blend recipe in this cake, as it contains leaveners such as baking soda and baking powder, which you do not want to add to an angel food cake. Angel food cake uses egg whites as the leavener, and a bit of cream of tartar to stabilize the egg whites and prevent them from drying out.  It contains no fat, making this an ideal dessert for waistline watchers! Gluten Free Chicken Alfredo

Though I already have a similar recipe for Gluten Free Chicken Alfredo, this one is a bit different. It is egg-free, and thickened with a tiny bit of starch. I also cut the chicken in the traditional bite size pieces, versus serving a chicken fillet on top of the creamy pasta. Though this dish is traditionally served with fettuccine noodles (see my Gluten Free Egg Noodles recipe), you may use your favorite gluten free pasta. I like to use penne pasta as an alternative. Gluten Free Crepes (Sweet or Savory)

Though I already have a Gluten Free Crepes Recipe, it is flourless and high protein. Today, after a Facebook fan requested a gluten free crepe recipe, I began to crave them myself. I wanted a traditional flour crepe; therefore, I used my gluten free all-purpose flour blend recipe. Though I suggest using a blender to make crepes, they can be made by whisking by hand. The use of a blender provides a smooth batter, so they will turn out perfectly.

In case you have never made crepes, I provide the instructions on how to swirl them in the pan, for a perfect crepe. Just note that sometimes your first crepe doesn’t turn out perfectly, just as in making pancakes. It allows you to adjust the temperature of the pan. Perhaps the first one will provide you a little snack to keep you satisfied until the others are done. Enjoy!

Spun Sugar

Have you ever wondered how they make those caramelized designs on fancy desserts? Some people try to make it using a mixture of water and sugar. When you add water to sugar during the caramelizing process, you are risking the chance of crystals forming. It is best to use sugar alone. I even found a recipe online calling for vinegar and water to be added to the sugar. Vinegar is only needed if you are going to use quite a bit of artificial food coloring. As in red velvet cake, vinegar offsets the bitter taste of the food coloring. You can create different shades of spun sugar by altering the time you brown the sugar. The longer you cook it, the darker it becomes. However, overcooking it can harden the sugar. Temperature is key. However, it is so easy to make…only one ingredient. How simple is that? Healthier Gluten Free Grilled Cheese Sandwich

You can coat your bread with tons of butter and fill it with ton of oozing melted cheese, but why not make your gluten free grilled cheese sandwich healthier? Add healthier fats by adding avocado, and using less cheese. Or…use the same amount of cheese, but add additional fiber. It will balance out the carbs from higher starched bread, resulting in lower net carbs. You can add your favorite raw veggies such as sprouts, tomatoes, and cucumbers, which provide additional fiber. In addition, use a higher fiber and higher protein bread. Learn about high protein gluten free flours. They are usually higher in fiber, as well. Instead of tons of butter, use a healthy oil of your choosing. I enjoy lite/light extra virgin olive oil. It has the same nutritional value as extra virgin olive oil, but less of the olive flavor. In a mood for a healthier alternative to donuts? These gluten free apple rings may just fit the bill. Rather than starch filled donuts, these fritter-like rings are filled with the natural sweetness, nature intended. The batter is lighter and crunchier than my Gluten Free Fruit Fritters recipe; skipping the butter, milk, egg whites, and baking powder, and replacing all with sparkling water. Though the batter is thinner, it can be made thicker simply by adding an additional tablespoon or so of rice flour. Top them with powdered sugar or an apple cinnamon caramel sauce (recipe included). Gluten Free Lava Cake – Molten Lava Cake

Lava cake is the perfect dessert for 2, especially on Valentine’s Day! It is known by several other names: chocolate lava cake, molten chocolate cake, fondant, chocolate fondant, fondant pudding, chocolate coulant, coulant au chocolat, and chocolate moelleux. This gluten free lava cake is made no differently than its gluten cousin. You only need to ensure that you use gluten free chocolate. For best results use dark or bittersweet chocolate. The best way to melt chocolate is to use real chocolate, versus chocolate chips. My favorite is Scharffen Berger Bittersweet 70% cocoa, the thick 9.7 oz. bar. It’s gluten free. When dusting the ramekins with flour and cocoa, be sure to also use a gluten free “pure” cocoa powder. I like using Rodelle’s Dutch processed cocoa, as it is less bitter than regular unsweetened cooca powder, and darker in color. Meanwhile, I hope you enjoy this decadent recipe. Gluten Free Chocolate Mug Cake (Sugar-Free Dairy-Free Egg-Free)

I’m under deadline on another project but wanted to squeeze in a recent recipe request for a healthier gluten-free mug cake. I chose chocolate this time, as I already have a recipe for a regular Gluten Free Coffee Mug Cake (actual coffee cake). I love coffee mug cake, as they are so easy to make! To make it healthier by using xylitol which is sugar-free, and dairy-free by allowing you to choose the variety of milk. I hope this helps more than just the person who requested it, as it is delicious. I am thinking of substituting some of the all-purpose flour for a little almond flour next time. If you try this idea before I do, please let us all know how it turns out. If you’d like, you can even add some natural peanut butter, or other nut butter, to the top/middle of the batter for a Reese’s Peanut Butter Cup flavor. Gluten Free Apple Crisp

Whether you live in the U.S. and call this dish apple crisp or in the U.K or Australia and call it apple crumble, they all taste the same. The use of rice flour makes this gluten free apple crisp, actually crisp on top. Adjust the juices to your liking by using lemon or apple juice. Or kick it up a notch with rum; or when all else fails, plain old water works. You’ll find many apple crisp recipes that call for tart apples, however, this one calls for red apples. You will want to use sweet crisp apples such as Braeburn, Empire, or Gala, however, good old Red Delicious will do. Just make sure they’re firm. They don’t hold up as well as the other varieties.
