After visiting Mexico this summer, I was determined to find out how to make soft gluten free white corn tortillas. I usually buy Mission Super Soft White Corn Tortillas. They are much softer than their yellow corn tortillas, closer to flour tortillas, but with more fiber and obviously no gluten. However, if you prefer freshly made gluten free corn tortillas and arepas, without gum and preservatives, try this simple recipe. The special corn flour is easily accessible online and in specialty markets. You only need to add water and salt. You don’t need a tortilla press to make them; however it works with one. Gluten Free Dumplings (Shaomai)
Shaomai (pronunciation here) are Asian dumplings filled with shrimp and pork cooked in a bamboo steamer or other makeshift steamer). They are similar to potstickers, but the filling is different and they stand erect and are not completely sealed. In this version, the dumplings are only steamed, not fried and steamed as I instruct in my potstickers recipe. However, both may be just steamed. Low-Carb Gluten-Free Breaded Cauliflower
They say that cauliflower is the new kale for 2016. I don’t know about that, but I do know that it is the perfect substitute for high carb starches like rice and potatoes.
