Dr. Oz recently shared a canned salmon salad recipe on his show. I do not eat salmon, but adapted his recipe to my liking and around my food allergies, used canned chicken breast instead; and added the mixture to my gluten-free bread roll. Gluten Free Chicken and Snow Peas

I purchased some snow peas at the market today because I was craving stir fry. Snow peas are very nutritious. Check out their nutritional facts. I searched and searched online for a chicken and snow peas recipes, but every recipe I came across called for ingredients that I did not have on hand. I had no rice vinegar, no fresh ginger, no apricot preserves, no cashews, no water chestnuts, no bamboo shoots, no peanut oil, no sesame oil, no almond flavored liqueur and no mushrooms. I got creative instead! My husband and I really enjoyed this dish. I use chicken breasts instead of whole chicken parts for lower fat content. This recipe has a slight hint of peanut, sweetness and tang, just in the right proportions. Some stir fry recipes just do not have enough sauce, in my opinion. To me, there is nothing worse than have a bunch of dry rice left to eat. I believe this one has the perfect amount of sauce. Try it and let me know what you think! This gluten free chicken fried rice recipe is a great for those watching their sodium and fat intake, as well as being gluten-free. If you are not watching your fat you can use any chicken parts versus chicken breast meat. If you are not on a gluten free diet you can use regular soy sauce. If you are not watching your sodium intake you can use any kind of regular gluten free soy sauce or tamari sauce. If you are vegetarian, you can use scrambled eggs versus chicken. Gluten Free Strawberry Chicken Salad

I usually make this gluten free chicken salad recipe with apples, but did not have any, therefore, substituted the apples with strawberries. It turned out great. Strawberries are not quite sweet enough now due to the season, but in a few weeks they will be. By adding a little stevia, which I do even in my apple chicken salad recipe, it sweetens up just right. You can use this chicken salad atop a salad, in a sandwich, or on celery sticks or crackers for an appetizer. Gluten Free Chicken Enchiladas

This recipe can be made with gluten-free low-sodium tortillas or regular gluten-free tortillas. Regular ones are much higher in sodium than the recipe I provide. I made these enchiladas with two different sauces, one for me and one for my husband. He loves the traditional sauce. Many of you may have a particular favorite already in mind. I offer a simple alternative sauce under the many “Tips” I list below. I used to make enchiladas with plain chicken and load it with cheese for flavor, but have learned to give them flavor without the extra calories and cholesterol. You can do both, though. I love avocados and I thought, “Why not mix it up with chicken for an avocado chicken salad sandwich or atop a salad?” I allow myself a serving of avocado once a week, as a treat. Adding a little Greek yogurt makes this recipe even less in calories, or use mayonnaise for richness, or neither. This is a quick, easy avocado chicken salad recipe that anyone can make. Chicken Tostada Over Rice Recipe

A while back I had made some chicken, tostada style. My husband eats gluten and he had some tortillas, but I was out my homemade gluten free tortillas. I happened to have some left over rice in the frig and voila! – an easy gluten free dinner recipe. I wasn’t happy with the photo and never posted it, but thought it is best to share and you can make your dish look more attractive. I like to make this recipe nice and saucy, adding much more chicken broth than a regular tostada. You make your own broth when cooking the chicken, therefore, you save money, too!
