While I have a few gluten free cake mug recipes, I had not yet developed a muffin in a mug recipe yet. Wanting a bit healthier version of the cake mug recipe, I decided to add a bit of flax seed meal to the cake recipe and add some blueberries. Summer heat already gotcha down? Try a refreshing salad instead of hot meal. Many people have trouble making gluten free pasta salad in advance. Rice pasta gets hard when refrigerated overnight. There are a couple of tricks to get you to succeed,though. Don’t use rice pasta. Try pasta made from other grains such as corn, quinoa, etc. If you must buy one that contains rice, at least make sure it is a mixture of other grains, too. Then, prior to refrigerating, add dressing, or at least oil, to the pasta to keep it soft. Keep in mind that gluten free pasta absorbs liquid quickly. Enjoy! Gluten Free Oat Milk Recipe

Homemade Gluten Free Oat Milk

While you can purchase oat milk in your local grocery store, the oats used in that milk is most likely not gluten free. Due to oats growing in fields adjacent to gluten crops and multiple other reasons, regular oats can contain up to 10% gluten. You can make your own gluten free oat milk at home. It’s easy and less expensive. I notice a quart of organic oat milk costs $3.49 at my local grocery store. You may not be able to find organic oats, but you can make a quart and  half for a little over $1.00; and it won’t contain any gum. Mom’s Almost Famous Gluten Free Rice Pilaf

Gluten Free Vegetable Rice Pilaf

My mother used to make this recipe using Campbell’s Beef Consomme Soup. Well, the days of that much sodium are over for us. Plus, it’s not gluten free. I tried several times to duplicate the recipe without beef consomme (too lazy to make my own). I finally created a gluten free rice pilaf recipe with tons of flavor! 

Update – I use Better Than Bouillon “reduced sodium organic” beef base/paste with water. I use more paste than suggested to make the broth so that it provides additional flavor. I use the reduced-sodium organic version. However, it may include cross-contamination nowadays. Always read labels carefully as manufacturers are constantly changing ingredients and sources for same.

Adding a little fruit or fruit puree, nuts, dried fruit, and cinnamon creates this delicious cream of rice cereal recipe. Of course, it’s all gluten free. The cereal alone is an  excellent source of iron. Gluten Free Cannoli Pancakes

Cannoli is an Italian dessert, tubes of crisp pastry, filled with sweetened ricotta cheese. Ricotta makes the most incredible pancakes. Also sweetened with sugar, these gluten free ricotta pancakes may be made extra-fluffy or traditional. Top them with a fruit puree or pure maple syrup. (Some traditional syrups contain gluten.) Serve your gluten free cannoli pancakes for breakfast or brunch. Your guests will not only be impressed, but they’ll be trying to guess the ingredients.
