Gluten Free Pie Crust Recipe (Blind Baked)

gluten free blind baked pie crust

I like to blind bake pie crust for pies that contain custard-based fillings such as pumpkin, sweet potato, and custard. A chef shared a little secret which I implemented in this blind baked gluten free pie crust recipe. It calls for a simple ingredient already in your pantry. It keeps the crust nice and crunchy instead of soggy on the bottom. I used this recipe to make a sweet potato pie which I will soon share with you as well. Gluten Free Swiss Roll or Jelly Roll with Dulce de Leche (Pumpkin Spiced or Cinnamon)

Gluten Free Swiss Roll with Cinnamon

I’ve been in the kitchen attempting to achieve an exceptional gluten free Swiss roll recipe. It turned out perfectly moist and easy to roll. This is a feat for Swiss rolls as they are much thicker than jelly rolls. However, you can also make a jelly roll using this low-sugar recipe. Because jelly roll pans make a thinner and longer cake, you can achieve more swirls when you roll it. While I’ve supplied a recipe for cinnamon caramel filling, I also make a few other suggestions. Enjoy! Continue reading “Gluten Free Swiss Roll or Jelly Roll with Dulce de Leche (Pumpkin Spiced or Cinnamon)”

Gluten Free Ravioli Rolls

Gluten Free Ravioli Rolls Casserole

This recipe is from my upcoming cookbook, Carla’s Best 125 Gluten-Free Recipes. Picture lasagna noodles. Then spread on a luscious ravioli filling. Roll them up, and top with your favorite pasta sauce and mozzarella cheese. Lastly, bake until just lightly crisp on top. You can also use the filling in traditional ravioli. However, this is a much faster way of achieving the same flavors. Continue reading “Gluten Free Ravioli Rolls”

Double-Frosted Gluten Free Red Velvet Cake Recipe

Double-Frosted Gluten Free Red Velvet Cake

This gluten free red velvet cake recipe is moist and luscious. Red Velvet is known for its richness. While not everyone has the time to make a three-layer, double-frosted cake, when you wish to impress guests, this is the cake to make. When time is short, make a single frosted cake and/or make a naked cake (no frosting on the sides). The cake, as well as frosting recipes, were raved about by my cookbook recipe testers. If you usually use ready-made frosting, you may never again.

Note: Also find this gluten-free recipe in my upcoming cookbook Carla’s Best 125 Gluten-Free Recipes. Continue reading “Double-Frosted Gluten Free Red Velvet Cake Recipe”

Gluten Free Baklava with Honey Syrup Recipe

Gluten Free Baklava with Honey Syrup

Two of my recipe testers considered themselves experts in baklava. I had them both make this gluten free version. One’s feedback was, “Honey made it taste just like the gluten version. Another stated, “I’ve tried a few different gluten free baklava, and this one is the best by far!” They [gluten-eaters] couldn’t wait the 4 hours. Loved it. Delicious!!!!” Continue reading “Gluten Free Baklava with Honey Syrup Recipe”
