Gluten Free Lemon and Coconut Shortbread Cookies
There’s nothing like a good shortbread cookie with a cup of tea. We used to devour one of my former client’s gluten free lemon shortbread cookies (Simply Shari’s), but I can’t have them anymore because they contain tapioca and citrus. My husband still enjoys them, though. Meanwhile, since my flour blend recipe calls for tapioca or cornstarch, I can make my own shortbread cookies. My hubby misses lemon desserts since I realized I was allergic to it. So, I’m trying to make enough to freeze for him to enjoy!. I hope you enjoy them as well.

Peach and Mozzarella Gluten Free Pasta Salad & Peach Vinaigrette
Summer heat already gotcha down? Try a refreshing salad instead of hot meal. Many people have trouble making gluten free pasta salad in advance. Rice pasta gets hard when refrigerated overnight. There are a couple of tricks to get you to succeed,though. Don’t use rice pasta. Try pasta made from other grains such as corn, quinoa, etc. If you must buy one that contains rice, at least make sure it is a mixture of other grains, too. Then, prior to refrigerating, add dressing, or at least oil, to the pasta to keep it soft. Keep in mind that gluten free pasta absorbs liquid quickly. Enjoy! - With this gluten free cheese tartlet recipe, you can use a combination of different vegetables. Rather than blanching asparagus, blanch some broccoli spears or green beans. You can use any vegetable that doesn’t contain a lot of water. The crust is flaky. It’s perfect for brunch!

Gluten Free Enchilada Casserole with Homemade Tortillas or Store-Bought
Imagine gooey, stretchy cheese, creamy beans (red or black), and tortillas that actually taste like real tortillas. Then add some enchilada sauce, red or green. What is it? My gluten free enchilada casserole recipe! You can use store-bought tortillas. Rudi’s makes excellent gluten free tortillas. You can roll them and they don’t break. I imagine other brands are available as well. I haven’t tasted Udi’s yet. However, I supply you with several homemade recipe choices in the tips section. My fave is gluten free naan, thinly rolled.
