Gluten Free Chocolate Ice Cream Recipe (or Rocky Road)

Image: Gluten Free Chocolate Ice Cream

Sunday, July 21 is National Ice Cream Day. I am mid perfecting a gluten free ice cream sandwich recipe and have been experimenting with a new gluten free chocolate ice cream recipe. I have made chocolate ice cream with a bit of xanthan gum, but this one turned out the best so far. Adding gum to homemade ice cream helps prevent crystals from forming and it provides a bit of chew. Using additional cream also helps prevent ice crystals and hard ice cream. There’s nothing worse than hard homemade ice cream. Enjoy! Gluten Free Donair Recipe – Meatloaf

Image: Gluten Free Donair

This gluten free donair recipe was adapted from Harvard University’s Donair recipe. Donairs are similar to gyros but better. The history behind donairs is very interesting. When Peter and John Kamoulakos tried to introduce their Nova Scotia restaurant clientele to lamb gyros, it did not go over very well. They changed the lamb to beef and created a sweet sauce (some say using evaporated milk, sugar, vinegar and garlic powder). Today there are two restaurants in Ontario, Canada named Halifax Donair (Halifax is a municipality [large city] in Nova Scotia). You will find many Canadian pizza restaurants serving donairs and donair pizzas. This gluten free donair recipe is my version of this very messy, yet savory and sweet fare.

Meatloaf

This meat also makes a wonderful meatloaf, especially when made with ground turkey. Continue reading “Gluten Free Donair Recipe – Meatloaf”

Gluten Free Apple Tart with Almond Custard and Crust

Image: Gluten Free Apple Tart

I recently developed a gluten free almond crust recipe for Answers.com (linked below) and of course I had to fill it with something delicious. I had several apples on hand and what better to compliment to almonds? This gluten free apple tart recipe has a strong almond flavor in its thick custard that surrounds that sauteed apples – just delicious! Enjoy. Gluten Free Pizzelle Recipe

Gluten Free Pizzelles - Flat or Molded

A gluten free pizzelle recipe sure to make your Italian grandma proud. They’re crisp, but not too crisp to mold into your favorite shapes. Serve these little gems flat topped with custard, whipped cream, or make ice cream tacos. Another option is to mold them around a cone-shaped mild to fill with ice cream or whipped cream. You can also shape them into cups and fill with your favorite custard, mousse, or ice cream. They also make a great substitute for gluten free cannoli shells. Southern-Style Gluten Free Biscuits and Gravy (with Dairy-Free and Vegan Options)

Image: Southern Gluten Free Biscuits and Gravy

Every time I hit a milestone on how many Facebook followers I have, I ask my fans what gluten free recipe they would like me to create. Gluten free biscuits and gravy was one of the recipes requested. I asked the gentleman if you wanted white or brown gravy. He desired the white, southern-style gravy. I went one step further, and made a true southern gluten free biscuit and gravy recipe by adding sausage to the gravy. This is optional, or you can even use the vegan substitute I list below. I hope my southern readers, as well as others, appreciate this delicious recipe. Continue reading “Southern-Style Gluten Free Biscuits and Gravy (with Dairy-Free and Vegan Options)”

Gluten Free Peach Pie

After receiving several requests for a gluten free peach pie recipe, I developed this recipe. My favorite way to serve is cold after firming it up in the refrigerator for a few minutes. This prevents the juice from running out. But sometimes you just can’t wait! I did this! I actually enjoyed it both ways, but it makes for a nicer presentation once firm. I’m sure you’ll enjoy this recipe. I used my new flaky gluten free pie crust recipe. For those who do not use my gluten free all-purpose flour recipe blend, you’ll be happy to know that superfine rice flour is not needed for the crust. Enjoy! Continue reading “Gluten Free Peach Pie”

Flaky Gluten Free Pie Crust Recipe (Pâté Brisée)

Flaky Gluten Free Crust Filled with Beef

Many of my Facebook followers have requested that I develop a gluten free pie crust recipe that does not call for superfine rice flour. This one turned out flakier than any other pie crust on this site. I have used it to make mini gluten free chicken pot pies, regular size, as well as a gluten free peach pie. They all turned out delicious. You will find that refrigerating the dough once rolled makes transferring the rolled out dough to the pie much easier. I have included that tip as well as another for ease in transferring the dough. Meanwhile, I hope you enjoy this recipe for many of your savory and sweet gluten free pies. Fourth of July Jello Dessert (Gluten Free)

Image: Gluten Free 4th of July Dessert

Jello is gluten free and enables you to make a very festive gluten free fourth of July jello dessert recipe. While I do not usually post any gelatin desserts, these are so adorable, I couldn’t resist. I just loved the red, white, and blue colors. You can create all sorts of fun things with this recipe: use different fruit, add fruit to the jello, tilt the glass while it’s chilling to create angled jello layers, and add vodka. I hope you all have a fun and safe 4th of July! Continue reading “Fourth of July Jello Dessert (Gluten Free)”
