These lovely gluten free empanadas are made from mashed potatoes, stuffed with sauteed onion, green pepper, garlic and cheese (or other filling), breaded, and then deep-fried. I cannot tell you how crunch these were!-just wonderful! And they only take 80-90 seconds to fry! You can fill them whatever you desire. Just be certain that if you use cheese to shred the cheese because chunk do not melt very quickly. Make them ahead of time and fry them up right before you serve your meal. Chocolate Sugar-Free Gluten-Free Donuts Doughnuts (Baked)
These are my favorite gluten free donuts, chocolate, chocolate and more chocolate! I had run across the cardboard wrapper that surrounded my donut pan and had been craving them, as I see it quite often. My husband’s favorite type of donuts are chocolate, and he’s coming home today from out of town. I thought what better way to greet him than have chocolate gluten free donuts awaiting him? Why not speed up your regular process for mashed potatoes by adjusting 2 steps and make garlic mashed potatoes? So many of us have very busy lives and need ways of speeding up the cooking process. In addition, I keep hearing from some of my readers that they make instant mashed potatoes. Why not go the fresh route instead? You can make mashed potatoes for 4 in as little as 20 minutes, if you leave on the peel, otherwise about 30 minutes. The smaller you cut the pieces of potatoes, the faster they cook. Nut-Free Dairy-Free Egg-Free Gluten Free Candy Corn
Halloween is almost upon us and there are many parents who are looking for a gluten-free candy corn made in a facility without gluten and nuts. Can’t find one? Make your own! This recipe is an adaption of the Best Allergy Sites’ Peanut Free Candy Corn – Egg Free Gluten-Free Candy Corn Recipe to also make it dairy-free. I substituted the butter and dry milk powder with other ingredients, and removed the vanilla. Candy corn doesn’t usually contain vanilla, and if you use a dark vanilla it will change the color of the candy. Hope you have some kids to help you make this fun gluten-free Halloween candy! Gooey Gluten Free Brownie Recipe
Tropical Traditions sent me a jar of their gluten-free organic brown rice syrup to try. My first thought was either to use it in an ice cream or in a baked dessert. Brownies, I thought! Oh, I couldn’t get them out of my mind! I already have a couple of gluten-free brownie recipes, however, I really was looking forward to making a healthier one, and one that was super gooey! I performed a search online for brown rice syrup recipes and stumbled upon just what I had in mind, a brownie recipe made with brown rice syrup! I converted it to gluten-free brownie recipe and 1 1/2 times’ed the recipe, as it originally made such small brownies. So, here it is – my newest gluten-free brownie recipe. It’s ooey, gooey, sticky and tastes almost like a chocolate caramel. I added a bit of flaxseed meal to make it a little more healthier, but using organic brown rice syrup was such a great start. Brown rice syrup may look like agave, but is barely sweet, and especially when this recipe is made with bittersweet chocolate. Definitely a decadent delight. Enjoy! Creamy Dairy Free Gluten Free Cauliflower Soup
My father is ill, and all of us daughters are taking very good care of him. I went shopping for him and came back with cauliflower, which he wasn’t too happy about. However, he said he would eat cauliflower soup. That was a perfect idea on a chilly San Francisco day. I thought I’d share my recipe for gluten free cauliflower soup with you which I made with very little ingredients on hand. Gluten Free Cinnamon Raisin Bread
My husband requested that I make him a gluten free cinnamon raisin bread. Having already created a cranberry cinnamon raisin oat bread, I thought I would use a different flour this time. In an attempt to make a more economical bread, I used the typical starches and white and brown rice flours. I really like this bread knowing it is sweetened only with molasses, and includes a little flax seed meal, as well. This bread is soft, much like a gluten-free sandwich bread, however, if you wish a lighter gluten-free cinnamon raisin bread, I would suggest using more tapioca flour than potato flour. Stove Top Chili Fries Recipe: Spicy or Mild
I was thinking about whipping up some of my Indian fries with turmeric, but had decided to turn this into a gluten free chili fries recipe. You may add cheese or not, however, these are very tasty on their own. The mustard is the key, here. Any of the spices, other than chili powder, such as cumin and red peppers can go to the wayside if making this for children.
