While on vacation, we ate at one my favorite gluten free menu restaurants, PF Chang’s China Bistro. While this appetizer from their happy hour menu is not gluten free, allow me to explain why it’s not. The waitress spoke to the chef on my behalf. He said that the only reason why they don’t label it gluten free is because it is made on a grill that would pick of cross-contamination from gluten. Their peanut sauce may also contain gluten, but I didn’t ask. Imagine gooey, stretchy cheese, creamy beans (red or black), and tortillas that actually taste like real tortillas. Then add some enchilada sauce, red or green. What is it? My gluten free enchilada casserole recipe! You can use store-bought tortillas. Rudi’s makes excellent gluten free tortillas. You can roll them and they don’t break. I imagine other brands are available as well. I haven’t tasted Udi’s yet. However, I supply you with several homemade recipe choices in the tips section. My fave is gluten free naan, thinly rolled. Cannoli is an Italian dessert, tubes of crisp pastry, filled with sweetened ricotta cheese. Ricotta makes the most incredible pancakes. Also sweetened with sugar, these gluten free ricotta pancakes may be made extra-fluffy or traditional. Top them with a fruit puree or pure maple syrup. (Some traditional syrups contain gluten.) Serve your gluten free cannoli pancakes for breakfast or brunch. Your guests will not only be impressed, but they’ll be trying to guess the ingredients. Avocado anything is terrific in my book, but this avocado buttermilk soup is just fantastic. If you’re fortunate enough to live in the San Francisco Bay Area, then you should make this before the end of the Dungenuss crab season, between June and July. Even in Central California, we have access to some. Of course you can make this soup without the crab salad in the center. You can make a chopped vegetable salsa instead. Enjoy! There are a number of ways of making gluten free dumplings. There’s my Chicken and Potato Dumplings, Asian Dumplings (better known as potstickers), and now this Italian version, better known as gnocchi. However, these are lighter than my Spinach Ricotta Gnocchi. I made them for dinner tonight. They were a welcomed change. You have probably already seen similar photos of pieces of hot dogs threaded with strands of spaghetti. I’ve taken a step further to improve the nutritional content of spaghetti hot dogs. Instead of using spaghetti made from white starches such as wheat and rice, I used sweet potato soba noodles. Soba means “buckwheat” which is gluten free, despite it sounding like it is from the wheat family. Using healthy, gluten free hot dogs, your child has a great lunch. Souffles tend to scare people because they’ve heard they fall often. There are tricks to creating the perfect souffle. Besides having the correct ratio of ingredients, you need something dry to coat the ramekin/container you bake it in, to which the egg mixture will adhere. Crunchy Baked Gluten Free Onion Rings

Bake onion rings for those you love! If you have about 45 to 60 minutes, you must try these crunchy, baked gluten free onion rings. I not only bread them in gluten free breadcrumbs, but I enjoy adding Italian seasoning and grated Parmesan cheese. Seasonings are optional, though. The method of this recipe is so successful at creating crunchy onion rings, that you’ll swear they are deep-fried.
