An easy and fun recipe your kids can help you make, gluten free spaghetti hot dogs. Use soba/buckwheat noodles instead of spaghetti for higher nutrition and more flavor.
Ingredients:
- 2 natural, nitrate-free, MSG-free, gluten free hot dogs, cut into 4 even pieces (Applegate, Open Nature)
- 56 strands of organic gluten free soba (buckwheat) noodles* (I used sweet potato soba noodles)
- 2 teaspoons butter (or gluten free margarine: Smart Balance; or for dairy-free, Earth Balance)
Instructions:
- Bring a 2 to 3-quart saucepan full of water to a boil.
- Thread 7 strands of pasta into each hot dog piece, pushing them halfway through the hot dog.
- Place them in the boiling water and wait a few seconds for the immersed ends to soften before pushing the other ends under the water. Cook on a low boil for 3 to 4 minutes.
- Drain the pasta using a colander and rinse with cold water. Add the spaghetti hot dogs back into the saucepan and add the butter. Heat over medium heat, tossing gently to warm everything and allow butter to melt.
- Serve immediately.
Tips
This makes a higher protein lunch. However, if you prefer more spaghetti, cut the hot dogs in 6 pieces each. This will increase the amount of spaghetti you will use.
