Gluten Free Meatball Soup

Gluten Free Meatball Soup

Most soup recipes contain onion or garlic. However, most kids just don’t care for the sight, texture or sometimes flavor of either. What are parents to do besides cook two meals? Well, this gluten free meatball soup does not contain any onion or garlic. However, it does contain basil in the broth and parsley in the meatballs. If your little one is okay on seeing “green things” (my oldest daughter used to call them) in their food, then this recipe should be okay. Continue reading “Gluten Free Meatball Soup”

Gluten Free Oatmeal Protein Shakes Recipes (Dairy Free)

Gluten Free Protein Shakes with Superfood

The other day, I needed a fast, healthy, light lunch. I waited too long to eat lunch and didn’t want to ruin my dinner. My first thought was protein shakes, but I didn’t have my go to fruit, banana. Being out of them, I reached for some frozen blueberries instead. But how was I going to get full on those? Well, I found a fulfillingĀ source of protein, oatmeal. Oats are the highest protein gluten free grain. I used a packet of Nature’s Path new Qi’a Hot Oatmeal in the Creamy Coconut flavor. The coconut flavor was overpowered by the blueberries, but it still tasted wonderful and was the perfect low-cal, healthy choice. The added grains, seeds and fiber makes it more flavorful and healthier. Plus I love anything that has a bunch of ingredients in one package. Meanwhile, you can use bananas, strawberries or your favorite fruit. Enjoy and stay healthy! Continue reading “Gluten Free Oatmeal Protein Shakes Recipes (Dairy Free)”

Gluten Free Indian Fry Bread (Navajo Flatbread)

Gluten Free Indian Fry Bread

Navajo fry bread was made by the Navajo Indians. Once other tribes began creating their own versions of the bread, it was known as Indian fry bread. Not all recipes for Indian fry bread contain yeast, but this version does. Some use cornmeal, while this one does not. I got the idea when a reader recently emailed me about how my gluten free pizza dough recipe (that you can make in a bread machine or not) turned out to be perfect for gluten free Indian fry bread. She doesn’t use a bread machine, but makes the dough by hand. You can do either. I have adjusted the recipe a bit if you just wish to try 1/3 of the pizza dough recipe. I used less egg white, a little more oil, a little more water, and a higher ratio of cornstarch for crispness. To my amazement, it was absolutely fabulous! I didn’t expect this Indian fry bread (actually a flatbread) to be appealing since it is a thicker dough than I am accustomed to using for what I consider American-Mexican food, but it was. Enjoy! Sweet & Savory Gluten Free Meatloaf

Sweet & Savory Gluten Free Meatloaf

Savory enough for adults with enough sweetness to please the kids, this gluten free meatloaf will please all. My husband grew up on a Kid-Friendly Meatloaf Recipe which contains ketchup. I’m trying to get him away from all of the salt that ketchup contains. mainThis is it! It’s sweet without too much salt. I love it! As a kid, I hated my mother’s meatloaf, but fell in love with mother-in-law’s ketchup-oatmeal version. I’ve been allergic to tomatoes for years and had to give it up. Now this is one you can sink my teeth into. The flavor remains even between two thick slices of bread. In addition, it’s so moist.

Gluten Free Chicken Adobo

Chicken Adobo Egg Rolls

I was watching the Today Show and saw a segment on adobo chicken. Adobo is a Filipino method of cooking food in vinegar and soy sauce. I have had adobo chicken before and enjoyed it; therefore, it sounded wonderful. This is my version of gluten free adobo chicken which is closer to teriyaki chicken since it contains ginger. It may be cooked on the stovetop or in a crockpot.Ā Enjoy!
