I usually make this low fat cream of broccoli soup by only using chicken broth, and sometimes even make it lower in fat by substituting some of the broth with water. However, this time I added some milk and a splash of whipping cream to make this higher in calorie for my father who is on a high caloric diet. I have added both low fat and high calorie variations in the recipe below. Lucky for me it’s easily made gluten free. I hope you enjoy this low fat cream of broccoli soup recipe, or the rich version. Gluten Free Gnocchi

This gluten free gnocchi recipe is so easy! While visiting with one of my Dad’s Italian neighbors, I mentioned that I was on a gluten free diet. The woman told me that one of her close friends was also. She makes her some gluten free gnocchi once in awhile. I was going to the grocery store and asked the neighbor if there was anything she needed. She said that she wanted some rice flour to make some gluten free gnocchi. She called me to come over so that I can see how she makes it and shared her recipe with me. She froze some and sent me home with some. It freezes very well. She mentioned that gluten free gnocchi is more delicate than the gluten variety so when I tossed it with some pesto sauce I used a rubber spatula to prevent any breakage, though it really wasn’t a problem. My father is ill, and all of us daughters are taking very good care of him. I went shopping for him and came back with cauliflower, which he wasn’t too happy about. However, he said he would eat cauliflower soup. That was a perfect idea on a chilly San Francisco day. I thought I’d share my recipe for gluten free cauliflower soup with you which I made with very little ingredients on hand. Whole Grain Gluten Free Bagels

This is my second attempt at gluten free bagels. My first attempt was a huge flop. This one has the perfect texture! I used Pamela’s products bread mix ingredient list as a base, and just judged the amounts. I began with a 3 cup flour mixture, but ended up needing a little more starch, so added a bit of potato starch. My husband loved them, and he’s not gluten-free. Next time I make this I’ll work on adding more a shine to them, as they are a bit flat in that area. In addition, I will change the flours a bit, as they are just a little grainy, not much after they cool, though. I’ll give the superfine rice flours a try. Stove Top Chili Fries Recipe: Spicy or Mild

I was thinking about whipping up some of my Indian fries with turmeric, but had decided to turn this into a gluten free chili fries recipe. You may add cheese or not, however, these are very tasty on their own. The mustard is the key, here. Any of the spices, other than chili powder, such as cumin and red peppers can go to the wayside if making this for children. While watching Diners Drive-ins and Dives I heard the words “5 Cheese Easy Grilled Cheese Sandwich”. Ah, it seems like I haven’t had a grilled cheese sandwich in ages, not to mention a gluten free grilled cheese sandwich. My husband calls this sandwich The Widow Maker (high fat, high cholesterol, high sodium) though he ate half my sandwich, after stating he was only going to have a couple of bites. Baked or Grilled Gluten Free Pizza Crust Recipe (in Cast Iron Skillet)

I keep hearing from some of my readers that it’s just too hot to bake, even a good gluten-free pizza! In researching how to grill a gluten-free pizza in a cast iron skillet, I came across Man Tested Recipes’ Pizza Dough for Cast Iron Skillet Pizza recipe. Though it is not a gluten-free grilled pizza recipe, it provided me with how much yeast to use, so I could skip the Expandex used in my previous gluten free pizza crust recipe. In addition, my last recipe was a bit too chewy for my taste. So, this time, I added a little more sorghum flour, used less tapioca starch and more potato starch, skipped the agar-agar, and tripled the yeast. It came out great in less than hour! Gluten Free Vegan Casserole with Artichoke Hearts

When my husband isn’t home for dinner, I often just throw any ingredients in a pan and go for it. I don’t need meat every night. This is my favorite out of all of my gluten free pasta recipes, and it happens to be gluten free vegan. The other night I went in my pantry for dog food when I spotted a jar of artichoke hearts and immediately thought of some with pasta, along with red bell pepper. The rest is history. I used just about every Italian ingredient I could get my hands on in my kitchen to create an authentic gluten free Italian recipe. It’s something that I knew must already exist; however, I had no name for it. That’s all I knew was I would be happy to pay for this in a fine restaurant as a main dish. Gluten Free Empanadas

Empanadas are a popular pastry found in the Caribbean, the Philippines, Latin America, Portugal, and Spain. The fillings are typically gluten-free. They are filled with various ingredients, whether sweet or savory, depending upon which part of the world they are made. They tend to be on the dry side, therefore, I used a rich creamy, flaky dough in my gluten free empanadas. Adding a juicy filling is advised, however, it will most likely leak out of the pastry dough and burn while baking. Cheese is a common ingredient in savory empanadas to avoid this dryness, and prevent leaking. You can add ground meat: chicken, beef with cheese, or plain cheese, along with sauteed vegetables and spices. If you find them dry you can make a dip, as well -an avocado dip, salsa, sour cream, etc. This gluten-free recipe is made on the Argentina flavor side, yet a little different. What type of filling will you make?
