Gluten Free Salad Dressing for Asian/Chinese Chicken Salad

Gluten-free Asian Salad

Little by little I am attempting to remove all soy from my diet. The one thing that I am still working on is converting some recipes to soy free. Therefore, for this Asian gluten free salad dressing recipe, often known as Chinese chicken salad, I chose to use balsamic vinegar instead of rice vinegar and soy sauce. I also used agave syrup to make it lower in effecting glycemic index levels. Enjoy! Continue reading “Gluten Free Salad Dressing for Asian/Chinese Chicken Salad”

Gluten Free Savory Quinoa Recipe

Gluten Free Savory Quinoa Recipe

I love this quinoa recipe! Years ago when I first began my gluten-free diet, I tried a quinoa pasta, but it made me bloated. I finally got around to cooking quinoa and I love it! What a great grain, actually it’s they are seeds, related to species such as beets, spinach, and tumbleweeds. I find quinoa to be very unique in flavor, in between rice and pasta. Of course, I had to top mine off with some grated parmesan and romano cheese – must be the Italian in me!  Enjoy this savory quinoa recipe! I sure did! Gluten-Free Basil Grilled Cheese Sandwich

Gluten-free Grilled Basil Cheese Sandwich

Mid business taxes, and in a rush for a quick lunch I popped my head in the frig for a quick gluten-free sandwich and saw some cheddar cheese. I haven’t had a grilled cheese sandwich in a couple of years, but just didn’t want a plain one, but one more on the style of California cuisine. I pictured sautéed onion and roasted peppers, but no time for that! I decided to spread my bread with some basil paste and layer each slice with cheddar cheese and plop it in the frying pan. Great and fast! I loved it, but did miss the sautéed veggies! Just remember, a gluten-free grilled cheese sandwich doesn’t have to be plain. Add any of your faves, including meat, such as chicken, bacon, etc. If you’re in a rush, this one is sure to please!

Shirataki Noodle Soup

Shirataki Soup

Shirataki noodles (aka Shirataki Yam Noodles) are considered miracle noodles, as they are gluten-free, calorie-free and contain very little carbohydrates! They contain much glucomannan (soluble) fiber which is nature’s riches source of fiber.  Soluble fiber is suggested for prevention and alleviation of IBS symptoms. Shirataki noodles are made from the Japanese Konjac plant. They make the noodles plain or with tofu. Tofu is supposed to have a closer texture to regular pasta, but is soy based, therefore, I use the plain.  You can throw together a quick soup made with shiratki noodles and whatever else you have on hand. This soup makes a great light lunch! You can use whatever meat you desire. I used grilled chicken breast. Below you will find a brand of gluten-free tamari (soy) sauce and a non-soy based substitute.  In addition, I included a soy sauce substitute recipe!  This is one of my favorite low-calorie gluten free soup recipes. Enjoy! Gluten Free Beef Faijitas

This gluten free beef faijitas recipe is one of two faijita recipes on this site. You can compare it to the other faijita recipe to decide which you would like best. Either recipe goes great with homemade gluten-free tortillas. This one is close to the Chili’s knock-off recipe, but no marinating needed and the ingredient amounts are different, as well as vinegar as a substitute for lime juice. You can use any color peppers you wish, but definitely add in some green along with other colored peppers. This recipe is great when you have a craving for faijitas, but not much time for preparation. Enjoy! Continue reading “Gluten Free Beef Faijitas”

Gluten Free Stuffed Bell Peppers

Stuffed Bell Pepper

I used to make gluten free stuffed bell peppers with the same ingredients as listed below, but instead of making a smoke sauce I used to use tomato sauce. I love smoked anything.  If that is the case with you, you’ll love this recipe. If not, use some tomato sauce instead. This gluten free stuffed bell peppers recipe is an easy gluten free recipe and tasty, too! Gluten Free Pizza Crust made with Expandex

Image: Gluten Free Pizza Crust made with Expandex

You do not have to own a pizza stone to make gluten free pizza crust, though a preheated stone does absorb moisture, creating a more crisp crust, without the use of additional oils and calories. I like to make pizza crust ahead of time, bake them for about 5 minutes and then freeze them. This enables me to come home after a busy day and just top them and bake them – voila! – a great gluten-free pizza ready in no time! Chewy, crunchy and a nice high dough on the edge! See my update towards the bottom of page for an alternate recipe along with links to many more pizza crust recipes. Continue reading “Gluten Free Pizza Crust made with Expandex”

Gluten Free Tostada Shells

Gluten-free Tostada Shell

Months ago I purchased a couple tostada shell pans and never got around to my tortilla shell experiment, but after making the soft corn tortillas from the Viva Vegan! cookbook, I just had to see if I could make gluten-free tostada shells with masa flour (corn flour treated with lime), without deep frying.  So, a couple of weeks ago, I got to experimenting and I share with you my findings for making the shells for gluten free tostadas.
