On a gluten free diet many of us eat a lot of rice. Gluten free risotto is a nice change. I am getting tired of the same old rice dishes and wanted to mix things up a bit. The only risotto recipes I have taste-tested were in fine Italian restaurants, but never cooked it myself. Imagine that! And I’m half Italian! Our family always ate the same asparagus recipe, boiled, and dipped in mayonnaise while eating. Traditional risotto includes parmesan cheese cooked into the rice. It makes it creamier, though it is pretty creamy alone because of the starch content of the arborio rice.  However, because prosciutto is already very salty I opted on just topping the rice off with a little parmesan cheese. One of my husband’s favorite dishes is mashed potatoes and cheddar cheese over Italian sausages. It is a great way to use up mashed potatoes. It is not something either of us can afford to eat very often, as far calories are concerned, but 3 or 4 times a year I make this special treat.  It’s right up there with pizza for us! I was not planning on posting this recipe, but snapped a quick photo anyway (before the cheese melted), and then later decided why not!  Kids love sausages and adults.  My mother used to make it for our family for years. When she decided to start cooking low cholesterol dishes she started broiling the sausages, cutting back on the grease.  It’s delicious broiled, too – nice and brown! Fork Tender Gluten Free Pork Ribs and Pulled Pork Recipe

You can serve these ribs as they are (boneless) or you can shred the meat and use it for a pulled pork sandwich because they are fork tender! You will not need a knife for these babies! I’d like to use the term “fall off the rib tender” but they are boneless. I enjoy pulled pork sandwiches with coleslaw atop a gluten-free roll and additional BBQ sauce. Since I am allergic to tomatoes I use my quick and easy homemade gluten-free chipotle sauce and Worcestershire sauce. You may consider using my homemade gluten-free barbecue sauce recipe that I created for my husband which is lower in sugar by using agave syrup and Worcestershire sauce instead of brown sugar. It’s very flavorful and has a hickory taste! Despite my tomato allergy, I couldn’t resist taste tasting the sauce while cooking! Oh, how I miss I good barbecue sauce!

Nothing like a good lentils and Italian sausage recipe. Someone sent me a bunch of gluten-free sausages during the holidays which I had frozen. I had contemplated what I should cook with them. I ended up making an Italian dish that is customarily served on New Year’s Day, lentils and sausage, which symbolizes prosperity for the upcoming year. With added seasonings and vegetables, it turned out very tasty! I have to say, this is one of my new favorite Italian recipes. You could even add more broth and make it a soup! Gluten Free Chicken and Snow Peas

I purchased some snow peas at the market today because I was craving stir fry. Snow peas are very nutritious. Check out their nutritional facts. I searched and searched online for a chicken and snow peas recipes, but every recipe I came across called for ingredients that I did not have on hand. I had no rice vinegar, no fresh ginger, no apricot preserves, no cashews, no water chestnuts, no bamboo shoots, no peanut oil, no sesame oil, no almond flavored liqueur and no mushrooms. I got creative instead! My husband and I really enjoyed this dish. I use chicken breasts instead of whole chicken parts for lower fat content. This recipe has a slight hint of peanut, sweetness and tang, just in the right proportions. Some stir fry recipes just do not have enough sauce, in my opinion. To me, there is nothing worse than have a bunch of dry rice left to eat. I believe this one has the perfect amount of sauce. Try it and let me know what you think!
