Gluten Free Chicken Biryani (Indian Chicken with Buttery Rice)

Image: Gluten Free Indian Chicken with Buttery Rice

This version of chicken biryani (Indian chicken recipe), is made with ingredients that you can find at your local grocery store and is a naturally gluten free recipe. I used to work near a restaurant that had the best Indian food ever. I miss their butter chicken, but cannot find a recipe which can even come close. I must say that this recipe is not butter chicken, however, it is buttery and I like it almost as much. It takes quite a bit of time to make, but the rice can be made in advance which is very convenient, especially if you are having guests. Enjoy this treat. I sure did! Yeast-Free Gluten Free Focaccia Bread

Image: Gluten Free Focaccia on a plate

This gluten free focaccia bread is commercial yeast-free. If you are allergic to yeast you may try substituting the apple cider vinegar with a bit of 1/4 teaspoon of cream of tartar. I haven’t tried it myself, but any high acidic ingredient will do, lemon juice, etc. This is a hearty recipe, much like regular focaccia. If you’re looking for something lighter, which contains yeast, try my newest Gluten Free Focaccia Bread Recipe. Meanwhile, enjoy!

Gluten Free Teriyaki Steak

Image: Gluten Free Teriyaki Steak with Pineapple

This gluten free teriyaki steak can be made with or without pineapple, but the pineapple makes a very nice compliment to the sweet and salty teriyaki sauce. Because it is grilled in the same pan the steak is, it tends not to be very sweet, but just lends a hint of sweetness. Serve over rice or just with a vegetable if you are a low-carber. This recipe is very easy to make which makes it a perfect dish for guests so you can enjoy their company! Continue reading “Gluten Free Teriyaki Steak”

Gluten Free Stuffing – Apple Walnut

Image: Gluten Free Stuffing with Walnuts and Apples

This gluten free stuffing recipe is great for roasting a chicken, as I used it, or for a turkey.  It contains apples and optional walnuts. I always suggest trying a new stuffing recipe with a chicken prior to using  it in your Thanksgiving turkey. The amount I made below was stuffed inside a 5 pound organic chicken, free of antibiotics and hormones, and the rest baked in foil aside the roasting pan. This is on the sweet side, but savory as well! Continue reading “Gluten Free Stuffing – Apple Walnut”

Gluten Free Chili Lasagna

Image: Gluten Free Chili Lasagna

My husband asked me to make chili, but of course, I had to find something new and unique to do with the chili besides plopping it in a bowl, though he loves it that way. Some people make Mexican lasagna with tortillas, refried beans and ground beef. Why not make a chili lasagna instead, gluten free, of course!? Hope you like it. If you cannot find gluten-free tortillas you can either make Gluten-free Soft Corn Tortillas or Low-sodium Gluten-free Tortillas. Enjoy! Continue reading “Gluten Free Chili Lasagna”

Gluten Free Casserole: Italian Sausage and Rice

Image: Gluten Free Casserole with Rice and Sausage

This dish is not only delicious, but very easy and fast to make. I use a precooked, frozen organic brown rice that I get at Trader Joe’s. Now for the taste…You know how bacon makes everything taste great. Well, between the saltiness, sweetness and spices of the sausage and the sweetness from all the different peppers this dish is addicting! I bet you go back for seconds, maybe even thirds! It’s one of those dishes that when you’re putting away leftovers (if there are any) you just have to have one more bite!

Baked French Fries Mozzarella and Gravy with Optional Beef Stew

Gluten Free Gourmet Diner Food – made healthier!

I was watching the Best Thing I Ever Ate and they explained how they made french fries with Mozzarella cheese and gravy. Boy did they had my mouth watering! In their version, the french fries were soaked to remove some starch; swirled in a bowl of fresh garlic; deep fried in duck fat once; then again 24 hours later; and topped with Mozzarella cheese and brown gravy. I chose to make my Baked French Fry Recipe to make it lower in fat and calories, and threw in some of my beef stew with wine simmered gravy made with very lean beef with all excess fat removed. It was heavenly! You can even use bison. Have fun with this one! Add your favorite meat or leave it as is. I’m sure the kids will love this, too! – similar to chili cheese fries, but a bit healthier! Gluten Free Potato and Bison Casserole

Beef Potato Casserole

As a gluten-free dieter one can eat just so much rice. That leaves potatoes! My mother used to make this dish for us for years on end. I hadn’t cooked it in years myself, but had all the right ingredients. She used to use beef and green bell peppers, but since I only had yellow, orange and red that is what I used. This used to be one of my husband’s favorites. I suppose I stopped making it as we got older and started watching our sodium content. We used to pour on the ketchup when we were younger. This used to be one dish my children would eat without any problems, too, even though it had something “green” in it! I hope you family enjoys this budget friendly casserole recipe. You can use beef or bison. This makes a great family meal. Continue reading “Gluten Free Potato and Bison Casserole”

Gluten Free Sauteed Napa Cabbage

Image: Gluten Free Sauteed Napa Cabbage

I have been doing very well on my gluten free diet; yet another gluten free meal! I had a Napa cabbage in my frig waiting to make another batch of gluten free potstickers, but never got around to it. I did not have another Napa cabbage recipe and thought that sauteed Napa cabbage would be a way to make a quick meal. My intention was to eat it all up as a main dish, without adding anything to it, but I was starving and because of the tamari sauce it really needed to be served over rice, which was perfect. So, I thought since I had leftover roast, already sliced, why not add some of that in, as well. It was great! You can keep this recipe vegetarian/vegan, but I am sure it would be fantastic with chicken or pork (chops or bacon), as well, or over rice or noodles, plain! I’m thinking Chinese BBQ Pork would be ideal! Enjoy! Continue reading “Gluten Free Sauteed Napa Cabbage”
