Spätzle in Swabian (a dialect of German) literally means “little sparrows”. Spaetzle are soft egg noodles made in southern Germany, Austria, Switzerland, Hungary, and other countries. In Germany, spaetzle is traditionally served by boiling the pasta and then sauteing in butter before serving. In Austria, they call these egg noodles Käse spätzle (Kaese Spaetzl). They boil the noodles, saute them in butter, and add caramelized onion and cheese. The latter was my first choice.  When I saw the gluten version of this gluten free chocolate chip pecan scone recipe, I just had to create a gluten free version. The scones may be made dairy free (as I did), vegan, or with dairy. No matter which way you make them, they are rich and delicious. Serve at a holiday brunch, Sunday brunch, or just because. I made them in advance for Thanksgiving breakfast as they freeze well.
