I’ve never been a fan of gingerbread cookies or houses when I consumed gluten, probably because people like to make them sturdy, which means dry in my book. Traditional Gluten Free Panettone Recipe
I recently made a large-size Gluten Free Panettone (pronounced pan uh tony) in an angel food cake pan. Panettone is a rich, buttery Italian yeast-cake prepared during the Christmas season. I usually make panettone more like bread than cake as I did in the above recipe link. That version has a crunchy crust, much like homemade bread. Gluten Free Eggnog Chocolate Cookie Cheesecake
I love my Eggnog Cheesecake recipe because you can do so much with it. Adding a chocolate cookie crust and chopped chocolate cookies and topping it with ganache, gives it an entire new look and flavor. Gluten Free Holiday Green Beans
While green beans are gluten free, not all brands of bacon are. I’ve been making this bacon and onion green bean casserole during the holidays for decades. It’s my favorite dish that I just can’t live without. My family loves it because I don’t skimp on the bacon. There’s nothing worse than being one of the last ones to dig in and have to dig for bacon. Kimchi Pork Pulled Pork
Kimchi is a Korean cabbage side dish that is usually fermented. It’s similar to cole slaw, but sweeter and spicier. See my Gluten Free Kimchi Recipe. I prefer to eat kimchi fresh, not fermented. Gluten Free Chicken Cordon Bleu
I have only had chicken cordon bleu once in my life, a matter of fact, it was when I was still dating my husband, back in the 70s! Making gluten free chicken cordon bleu was a breeze. It’s not much more difficult than breading chicken. However, it’s delicious! My version uses an herb prosciutto mix. However, you can use slices of prosciutto instead, to make it easier, which is the traditional method. I enjoyed the extra herbs, though. Plus I had some leftover from my Pork on Pork recipe. Prosciutto is a popular Italian delicatessen cut of meat used in many popular main dishes such as Chicken Cordon Bleu. Prosciutto is to ham as pancetta is to bacon*, similar, yet different. I use prosciutto in this “pork on pork” chop recipe that was inspired by a cookbook author, Amanda Freitag, who was recently promoting her cookbook, “Comforting Classics” on the Food Network channel. Waffle Iron Gluten Free Quesadillas & Spicy Dipping Sauce
In my attempt to create more single-serve recipes, I recently tested out my small, inexpensive, ceramic waffle iron to make gluten-free quesadillas. They turned out incredible! They have a slight crispness to the outer shell, which you can control by cooking shorter or longer. The inside contains gooey cheese with chicken, or any other addins you prefer.
