Gluten Free Beef Gyros
When Chobani sent me coupons for their amazing Greek yogurt, it inspired a few new recipes. To start the ball rolling, I made a Greek cucumber yogurt sauce and used it in these delicoius gluten free beef gyros. Instead of pita, I used my gluten free galric naan recipe (Indian flatbread). Greek Cucumber Dill Sauce or Dip (Tzatziki Sauce)
Tzatziki sauce is a Greek cucumber sauce served with meat or used as a dip. Tzatziki is primarily made of strained yogurt, in this case, Chobani Greek Non-Fat Yogurt. It’s gluten-free! They sent me some coupons for a few free yogurts so that I can create a tailgating recipe for them. Though this sauce is Greek, you can use it with other cultural foods such as saucy Indian dishes, as a dip with naan (Indian flatbread), on enchiladas, and as a dip with veggies as a snack. For authentic Greek dishes use as a sauce for gyros, or as a dressing for cucumber salad or other Greek salads. Gyros are perfect for tailgating. Soft Gluten Free Garlic Naan – Oven-Baked or Stovetop
Naan is the Indian version of flatbread. There are two versions, crisp/firm and the one I prefer, soft. The soft is to-die-for and is the only version I make! Everyone who has tried my skillet version raves about it. If you have a pizza stone, that version is even better! That’s all I make during the fall and winter. Gluten Free Tiramisu Parfaits
One of my favorite recipes is tiramisu. These gluten free tiramisu parfaits combines some of my favorite fillings: vanilla pudding, cream cheese, and whipped cream with one of my favorite cakes, sponge cake. (The sponge cake is the same recipe I use in my Gluten Free Tiramisu Cake Recipe.) The espresso, or strong coffee, along with chocolate create traditional tirmasu flavor. Crockpot Gratin Potatoes
Did you know there was a difference between au Gratin and Gratin Potatoes? There is. You top au gratin potatoes breadcrumbs or grated cheese where gratin contains light browned crust of breadcrumbs or melted cheese. You may use your favorite cheese in this crockpot version gratin potatoes. You can layer or top them with your favorite gluten free bacon.
I use Applegate Natural Sunday Bacon. It’s free of added nitrites or chemical preservatives but contains plenty of flavor. It’s the first natural bacon that I’ve tried that tastes like bacon. Mmmm. Continue reading “Crockpot Gratin Potatoes”
Stovetop Fruit & Champagne Sabayon – Creme Brulee-Style
Sabayon is French for a light, whipped custard containing sweet wine or champagne. In Italian it is called zabaione. You can become extremely creative with this dessert. I added some caramelized fruit and topped it creme brulee style. You can use fresh fruit, but when not in season, canned peaches will do or a little pie filling. Below, I have shared the recipe as well as the different sweet sparkling wines you can use in this naturally gluten free sabayon creme brulee. It’s a perfect dessert to serve to those who are gluten-free when you’re not, as it doesn’t call for any special ingredients. Traditional Gluten Free French Toast
I’ve been craving French toast, and realized that I do not have a traditional gluten free French toast recipe on this site. I have a savory version and a make-ahead casserole version that I created using Udi’s bread. However, this time, I used my homemade gluten free oat bread recipe. It’s our favorite in our house. Gluten Free Chocolate Biscotti
I love these gluten free biscotti because they are moist. You can also make them dryer, if that is what you prefer. I’ve including baking instructions for both. However, they are not so dry that you have to have something to drink nearby. I like my biscotti closer to shortbread cookies, with just a little less butter.
