I never got around to posting a recipe for Super Bowl, but I thought gluten-free cheese puffs would make a nice appetizer or snack for today’s game! Gluten Free Cherry Pie
Someone recently asked me if I had a gluten free cherry pie recipe, and it got me thinking. It is my husband’s fave, though I do not care for it. I thought I would make him a gluten free treat and try one of the gluten free pie crust recipes from “Gluten Free Cooking For Dummies®“. Because all flours measure differently, my dough ended up very crumbly. So, I added a bit of shortening to soften up the dough which makes crusts nice and flaky, too! I only had 2 cans of cherry pie filling, but really needed 3 for my pie pan, but it worked out alright anyway. Please make sure you read the labels of any pie fillings. Gluten Free Pizza Crust made with Expandex
You do not have to own a pizza stone to make gluten free pizza crust, though a preheated stone does absorb moisture, creating a more crisp crust, without the use of additional oils and calories. I like to make pizza crust ahead of time, bake them for about 5 minutes and then freeze them. This enables me to come home after a busy day and just top them and bake them – voila! – a great gluten-free pizza ready in no time! Chewy, crunchy and a nice high dough on the edge! Gluten Free Stove-Top Chicken Potato Casserole
This one dish gluten free casserole is very easy to make! Rather than wait 1 hour in the oven to bake chicken and potatoes, you can cook it on the stove top in 15-20 minutes, depending upon the size of your potatoes. And you can leave the skins on the potatoes if you desire, which speeds up the prep work. I appreciated this recipe because it uses only one pan. To my surprise, as I am not usually one to eat chunks of onion and especially garlic, they turned out so sweet in the dish! I hope this makes your gluten-free dinner meals faster and easier! Gluten Free Pasta Recipe: Chicken Alfredo
While on our at-home vacation I wanted to make a few special dinners. Though this gluten-free pasta recipe is high in calorie, my husband may have ordered this dish at our favorite local Italian Restaurant, Nativo’s. However, we had it at home, all gluten-free! Gluten Free Corn Muffins with Pears and Expandex
One of my family members was recently diagnosed with high blood pressure and requested a batch of my low-sodium baked goods. Since their favorite fruit is pears I decided on my gluten-free pear corn muffins. Because they are not on a gluten-free diet and not used to heavy gluten-free food, I decided to experiment and add a little bit more tapioca flour (1/3 cup instead of 1/4 cup) and 1/4 cup of Expandex. Expandex also improves shelf life and helps save the texture of gluten-free foods while freezing. Wow! They really expanded and rose very nicely. In addition, I noticed that muffins made with Expandex had a nice crunchy muffin top, where the prior muffins had a soft top even where brown. Gluten Free Beef Stew Chili
This gluten free beef stew recipe is actually another one of my gluten free chili recipes without tomatoes, (due to my allergies). Some assume chili is naturally gluten-free, but if you use a package chili mix it may very well contain wheat gluten. This chili recipe is thickened with potato starch, though you may use cornstarch, if that is all you have on hand. You may also add tomatoes to this recipe, if you wish, which will sweeten it up a bit, or you can sweeten it with sugar, agave nectar, stevia or a combination of any of these. It is wonderful over baked french fries, which is how I used it, or you can top it over baked potatoes or rice. It is only a tad spicy, so if you like it hot, spice it up a bit more using additional cumin and chili powder. The worcestershire sauce gives it more a beef stew flavor, therefore, if you desire more a chili flavor, just skip it or add more chili powder. Enjoy! Continue reading “Gluten Free Beef Stew Chili”
Savory Gluten Free Chicken Salad on Rudi’s Bread
I was out of town and running low on my Udi’s gluten-free sandwich bread. I wanted to pick some up while I was out, just in case. I went to Whole Foods in Napa, California and could not find Udi’s bread, but many other brands I lifted each one, looking for a light-weight bread like Udi’s, but they were all heavy, until…I found Rudi’s gluten-free bread! I thought, “Oh my! This is light!” I ended up not using it, but placed it in my sister’s freezer and brought it home with me. I was still using my Udi’s bread, until I realized I had not yet tried the Rudi’s bread. Wow! The texture is just like regular white bread! See the photo below for yourself. This made a great savory chicken salad sandwich.
