Gluten Free Coffee Liqueur Recipe (aka Likuah) or Kahlua

Homemade Gluten Free Coffee Liqueur - Kahlua

“Coffee Likuah”. That’s what I accidentally called this concoction when I was creating this recipe. I suppose I had tested the batch one too many times! It’s actually the perfect name for this coffee liqueur. I was thinking “coffee liqueur” but also thought how similar it is to Kahlua. So, out came “coffee likua”. Even without the alcohol, it is an amazingly tasty syrup! Continue reading “Gluten Free Coffee Liqueur Recipe (aka Likuah) or Kahlua”

Gluten Free Battered Curly Fries (aka Battered Fries for Battered Husbands)

Gluten Free Battered Curly Fries

Mildly spiced or super hot, these exceptionally flavorful gluten free battered curly fries don’t have to be made curly. Use a standard cut if desired. Pople say they taste like Arby’s curly fries. I’ve included the deep-fried battered and baked versions. Enjoy!

I call these “Batter Fries for Battered Husbands” because I rewarded my husband with them for working in 100ºF weather putting up our new fence. He loves that phrase! I think it made him feel appreciated. I need to do that more often! Continue reading “Gluten Free Battered Curly Fries (aka Battered Fries for Battered Husbands)”

Gluten Free Apple Custard Cake Using Betty Crocker Yellow Cake Mix or Copycat Recipe

It’s crazy how inexpensive this cake is to make, not to mention delicious. Where can you get a buttery gluten free cake for that price? You have to try it! I’ve included dairy free substitutes. Gluten Free Lasagna Recipe Without Boiling Noodles on the Stove

Gluten Free Lasagna with Bolognese Sauce

Over the years, I am often asked how to cook lasagna noodles without boiling them. Some people want a faster method, but most want to prevent breaking the noodles, while others just do not have a pot that is large enough. Using a large casserole dish, this method prevents breakage of the noodles which makes for a less stressful recipe and a large pot is not needed, just a long casserole dish. This method saves a little time because it doesn’t take as long to boil 2 quarts of water compared to a stock pot full of water. Meanwhile, I hope you find this method useful.

Gluten-Free Dairy-Free Pastry Cream – Egg-Free (Vanilla, Banana, or Almond)

Gluten Free Dairy Free Pastry Cream

I’ve been converting some of my recipes to dairy free per many requests. The thing I would miss the most if I were 100% dairy free is pastry cream. That’s what I put in my favorite birthday cake, Gluten Free Boston Cream Pie. Last year I made Gluten Free Boston Cream Cupcakes for a picnic on the lake. This recipe tastes just as good!
