Gluten Free Cucumber Salad with Creamy Dill Salad Dressing

When I visited Los Angeles in the past, I loved going to a this little hole in the wall Greek restaurant that served a great cucumber salad with a creamy dill dressing. I had to recreate it! I don’t know why I didn’t years ago. It is wonderful!  I did however use green onions instead of yellow onions and I like it much better! They did not use carrots, but I like a little color once in awhile. You can use a gluten-free Greek yogurt or sour cream. Leftovers taste even better! Gluten Free Agave Popcorn Balls

Recent time spent with my grandchildren got me to thinking of my childhood. I remember eating pink caramel popcorn. Remember that? All that sugar just seemed wonderful, and the artificial coloring made it very attractive! Fortunately, now, most people are gearing up towards healthier choices. No more red dye no. 40 which contains petroleum and less refined sugar. I decided to try a popcorn ball recipe sweetened with agave syrup. This is a great recipe to use up your left over popcorn, too! I am sure kids will enjoy this sweet treat! Continue reading “Gluten Free Agave Popcorn Balls”

Gluten Free Tender Pork Chops with Red Sauce and Rice

Gluten Free Pork Chops and Rice

If you like an occasional pork chop, but find them too dry, try my mother’s recipe. It’s naturally gluten-free. She used to call it, “Pork chop rice and gravy”. I like to call it that, too, but most people call it pork chop with red sauce. It is a very easy pork chop recipe with few ingredients. These are really tender pork chops. They are so tender you can break it up with a fork, especially the pork chops with a bone. Continue reading “Gluten Free Tender Pork Chops with Red Sauce and Rice”

Gluten Free Raw Fudge

Gluten Free Raw Fudge

After watching this video recipe on Raspberry Ganache Fudge Cake I have been wanting to try it. Unfortunately, I had no avocado for the frosting, nor raspberries for the filling. Darn! I tried a different spin on things and made a smaller portion of what I really would like to call “guilt-free” raw fudge. This raw fudge makes a great dessert, as well as a snack, and is also low-sodium, low-fat, vegan, gluten-free and dairy-free dessert. And healthy, too! Continue reading “Gluten Free Raw Fudge”

Chocolate Almond Milk Ice Cream Recipe

Chocolate Almond Milk ice Cream Recipe

I adjusted my sinfully rich chocolate ice cream recipe to this much healthier version, even higher in protein, plus tons of fiber, all without the refined sugar and cow’s milk though it does contain eggs. It is still very delicious for such a healthy ice cream recipe. You can make chocolate, raw almond milk ice cream, chocolate raw pecan milk ice cream, chocolate raw hazelnut ice cream, or whichever nut you choose. Gluten Free Blackberry Sauce for Ice Cream and More

My father came for a visit recently and he just loves homemade vanilla ice cream. I only like vanilla if has a topping, though. So, I had some fresh blackberries that were not very sweet. I sweetened them up a tiny bit by making an ice cream topping. It is made with fresh blackberries, a little organic blueberry fruit spread and agave syrup. It is not very sweet, but the fruity flavor combined with the sweetness of the ice cream is just perfect. I enjoyed it, as did my other guests.
