A month or so ago, I went to an Italian restaurant where I was served pesto mashed potatoes and it was one of those hitting my forehead type of moments, “Why didn’t I ever think of that?” They were fantastic, but lacking in butter. Perhaps they used olive oil only. They had just a hint of garlic and basil, not overbearing as you may expect. It didn’t taste like pesto pasta, nor garlic mashed potatoes, but a unique, flavorful mashed potato. I was able to duplicate the recipe, and wanted to share it with you, though my version has more butter than theirs. Rich, decadent and creamy! Gluten Free Spicy Indian Fries

I have been on a spicy food kick lately. Can’t explain it, but these gluten free french fries hit the spot! I have been really enjoying experimenting with cultural food. I never thought I would ever eat spicy fries, but I loved these! This gluten free recipe was inspired by a recipe in Food and Wine magazine, and is naturally gluten-free. Gluten Free Navy Beans

A gluten free navy beans recipe just like my mother used to make. The only difference is that she used to add a little tomato sauce for color and flavor. I used a little tomato-free gluten-free chipotle sauce. This is a great recipe to make and freeze individual portions for those busy days and nights, or just when you’re too tired to cook. Gluten Free Cheese Sauce

Broccoli Potato with Gluten Free Cheese Sauce

Many months ago I posted a recipe for broccoli stuffed potato with cheese sauce, but the file became corrupted and it disappeared! Someone asked me to republish it. The most important part of the recipe is the gluten free cheese sauce which you can use to make macaroni and cheese or add atop a baked potato, broccoli or cauliflower. It is also the base for cheese soup. You can add pieces of cooked broccoli to the top of a baked potato and pour on the cheese sauce. Mashed Gluten Free Sweet Potato Recipe

This gluten free sweet potato recipe was made from an error. My husband went grocery shopping. Big mistake! Huge! I asked him to pick up some sweet potatoes for my mashed sweet potato recipe and neglected to tell him I wanted the red ones. He came back with yellow sweet potatoes, a cross between a regular potato and red sweet potatoes or yams. The yellow ones are not as sweet and I could not use them in the recipe I had in mind. Yeast-Free Gluten Free Focaccia Bread

This gluten free focaccia bread is commercial yeast-free. If you are allergic to yeast you may try substituting the apple cider vinegar with a bit of 1/4 teaspoon of cream of tartar. I haven’t tried it myself, but any high acidic ingredient will do, lemon juice, etc. This is a hearty recipe, much like regular focaccia. Savory Fruit Salad: Mango and Dried Cherry

Of course this fruit salad is gluten free, but it does not take special ingredients to make this recipe. It is fast to make, yet elegant to serve, with proper garnishes. October is mango season where I live in California. Perhaps the season is different where you are. Mangos tend to be overlooked during the fall, as many of our favorite fruits go out of season. I love the fall color of mangos, as well as their flavor. I hope you, and possibly your guests, enjoy this savory fruit salad recipe. Gluten Free Stuffing – Apple Walnut

This gluten free stuffing recipe is great for roasting a chicken, as I used it, or for a turkey.  It contains apples and optional walnuts. I always suggest trying a new stuffing recipe with a chicken prior to using  it in your Thanksgiving turkey. The amount I made below was stuffed inside a 5 pound organic chicken, free of antibiotics and hormones, and the rest baked in foil aside the roasting pan. Gluten Free Chili Lasagna

My husband asked me to make chili, but of course, I had to find something new and unique to do with the chili besides plopping it in a bowl, though he loves it that way. Some people make Mexican lasagna with tortillas, refried beans and ground beef. Why not make a chili lasagna instead, gluten free, of course!? Hope you like it.
