I was watching the Best Thing I Ever Ate and they explained how they made french fries with Mozzarella cheese and gravy. Boy did they had my mouth watering! In their version, the french fries were soaked to remove some starch; swirled in a bowl of fresh garlic; deep fried in duck fat once; then again 24 hours later; and topped with Mozzarella cheese and brown gravy. I chose to make my Baked French Fry Recipe to make it lower in fat and calories, and threw in some of my beef stew with wine simmered gravy made with very lean beef with all excess fat removed. It was heavenly! You can even use bison. Creamy Asparagus and Potato Soup

I knew I had to use up the asparagus I had in the frig. I decided to make a creamy asparagus and potato soup. Out of all my gluten free soup recipes that are creamy, I find this one to be the healthiest. When deciding on a thickener I considered using a gluten-free sour cream and Greek yogurt, but remembered what Gluten Free Chef Rob mentioned about thickening things naturally. I already had some boiled potatoes in the frig which I added in, but you can add fresh potatoes to this recipe all in one pot. I usually use potatoes in sweeter soups such as my Zucchini Mango Soup Recipe and Butternut Squash and Apple Soup, but this turned out wonderful, – not too much asparagus, just right, and nice and savory! Gluten Free Potato and Bison Casserole

As a gluten-free dieter one can eat just so much rice. That leaves potatoes! My mother used to make this dish for us for years on end. I hadn’t cooked it in years myself, but had all the right ingredients. She used to use beef and green bell peppers, but since I only had yellow, orange and red that is what I used. This used to be one of my husband’s favorites. I suppose I stopped making it as we got older and started watching our sodium content. We used to pour on the ketchup when we were younger. This used to be one dish my children would eat without any problems, too, even though it had something “green” in it! I hope you family enjoys this budget friendly casserole recipe. Gluten Free Sauteed Napa Cabbage

I have been doing very well on my gluten free diet; yet another gluten free meal! I had a Napa cabbage in my frig waiting to make another batch of gluten free potstickers, but never got around to it. I did not have another Napa cabbage recipe and thought that sauteed Napa cabbage would be a way to make a quick meal. My intention was to eat it all up as a main dish, without adding anything to it, but I was starving and because of the tamari sauce it really needed to be served over rice, which was perfect. So, I thought since I had leftover roast, already sliced, why not add some of that in, as well. It was great! You can keep this recipe vegetarian/vegan, but I am sure it would be fantastic with chicken or pork (chops or bacon), as well, or over rice or noodles, plain! Gluten Free Asparagus Prosciutto Risotto

On a gluten free diet many of us eat a lot of rice. Gluten free risotto is a nice change. I am getting tired of the same old rice dishes and wanted to mix things up a bit. The only risotto recipes I have taste-tested were in fine Italian restaurants, but never cooked it myself. Imagine that! And I’m half Italian! Our family always ate the same asparagus recipe, boiled, and dipped in mayonnaise while eating. Traditional risotto includes parmesan cheese cooked into the rice. It makes it creamier, though it is pretty creamy alone because of the starch content of the arborio rice.  However, because prosciutto is already very salty I opted on just topping the rice off with a little parmesan cheese. Most fried rice recipes are gluten free until someone places soy sauce in it. This gluten free beef fried rice recipe calls for tamari sauce, a gluten free soy sauce. Low Fat Baked French Fries

Let’s face it french fries that have been deep fried are high in calories. If you’d like a french fry lower in fat and calories just bake them. I’m all for low fat french fries! I recently purchased a Nonstick French Fry Baking Pan which allows the heat to rise from the bottom through holes in the pan, allowing browning to occur on both sides.
