When you just cannot deal with rolling a double gluten free pie crust, these mini fried gluten free pies are ideal. However, unlike pie crust, they are crunchy. You may fill them with sweet or savory fillings. For my test recipe I just used Comstock fruit pie filling. Both Comstock and Wilderness brands are gluten free. These little gems are similar to empanadas (Spanish pies), but instead of baking them, you fry them. When empanadas are made in smaller sizes to serve as appetizers, such as these, they are named tapas. You may wish to check out my savory gluten free empanada filling (the crust on that recipe is a traditional gluten free pie crust), or my homemade sauteed apples for a healthier filling, if you’re not a quick open-a-can type of person. Chocolate Nut Brittle Recipe: Without Corn, if Desired
While a traditional nut brittle recipe contains the nuts within the brittle, this recipe is topped with nuts and then chocolate. Meanwhile, this nut brittle will have everyone in one those moods of “bet you can’t eat just one”. Continue reading “Chocolate Nut Brittle Recipe: Without Corn, if Desired”

Super Crunchy Gluten Free Bread Sticks Recipe (Breadsticks)
This crunchy gluten free bread sticks recipe is so crunchy, I just had to share it with you. The recipe was inspired by the ingredients in Schar’s Gluten Free Breadsticks. They are much harder and crispier than Schar’s, but in gluten free bread sticks, this is a good thing. Other names for these bread sticks are grissini (thin, crisp Italian breadsticks) or dipping sticks. See my below notes to learn more. Then try them yourself.

Wine and Cheese Gluten Free Cracker Recipe
I am honored to present this gluten free cracker recipe that I developed for WholeVine. They offer grapeskin and grapeseed flour made from wine grape remnants as well as gluten free cookies. A couple of months ago I surveyed my Facebook followers for their favorite wine, and Riesling was the winner. So, I used Riesling grapeseed flour in this gluten free cracker recipe. However, they offer several other varieties, including grapeseed flour. Just be sure not to use grapeseed flour in this recipe as additional liquid ingredient would be required. Meanwhile, cut your favorite cheese, pour a glass of wine, and enjoy! Continue reading “Wine and Cheese Gluten Free Cracker Recipe”
Gluten Free Dark Chocolate Covered Rice Cakes
I have had several requests for healthy gluten free recipes. With summertime here, I thought those of you with children would appreciate some ideas for healthy gluten free snacks. I remember when I first began my gluten free diet in 2005, I tried a rice cake, and could barely finish it. It was so dry and tasteless. I resorted to snacking on watermelon instead. Things have changed, but I have learned different ways to consume rice cakes. When making these chocolate covered rice cakes, be sure to use a gluten free brand of rice cakes if you are gluten intolerant. I have listed one brand below. Continue reading “Gluten Free Dark Chocolate Covered Rice Cakes”
