Creamy polenta is one of my favorite starches, and is naturally gluten free. If you can tolerate corn you will love this dish. If not, you can use the chicken and gravy recipe over rice or pasta. I enjoy my polenta creamy, but you can bake the polenta once chilled and set in the refrigerator, if you desire. Continue reading “Creamy Gluten Free Polenta, Chicken and Gravy”
Baked French Fry Recipe
Let’s face it french fries that have been deep fried are high in calories. If you’d like a french fry lower in fat and calories just bake them. I’m all for low fat french fries! I recently purchased a Nonstick French Fry Baking Pan which allows the heat to rise from the bottom through holes in the pan, allowing browning to occur on both sides. A little olive oil spray makes them taste like regular french fries. Continue reading “Baked French Fry Recipe”
Gluten Free Au Gratin Potatoes
Who doesn’t like au gratin potatoes, right? You can make this dish with milk, cream, half & half, a combination thereof, or a milk substitute. If you’re dairy free you can use a cheese substitute. For vegan or dairy-free use a cheese and milk substitute. This gluten free au gratin potatoes recipe is made without any flour at all. Enjoy!
Update: my new favorite I’ll gratin potato recipe is this Fast Baking au Gratin Potatoes using smoked Gouda cheese. Continue reading “Gluten Free Au Gratin Potatoes”
Candied Walnut Cranberry Salad with Balsamic Dressing
This recipe is written so that you can prepare the candied walnuts and dressing the day before you serve the salad. My guests beg for it every time they come to visit, and most go back for seconds and thirds. Continue reading “Candied Walnut Cranberry Salad with Balsamic Dressing”
Fork Tender Gluten Free Pork Ribs and Pulled Pork Recipe
You can serve these ribs as they are (boneless) or you can shred the meat and use it for a pulled pork sandwich because they are fork tender! You will not need a knife for these babies! I’d like to use the term “fall off the rib tender” but they are boneless. I enjoy pulled pork sandwiches with coleslaw atop a gluten-free roll and additional BBQ sauce. Since I am allergic to tomatoes I use my quick and easy homemade gluten-free chipotle sauce and Worcestershire sauce. You may consider using my homemade gluten-free barbecue sauce recipe that I created for my husband which is lower in sugar by using agave syrup and Worcestershire sauce instead of brown sugar. It’s very flavorful and has a hickory taste! Despite my tomato allergy, I couldn’t resist taste tasting the sauce while cooking! Oh, how I miss I good barbecue sauce!

Gluten Free Barbecue Sauce Recipe
Instead of using bottled sauce for my ribs I created a barbecue sauce recipe using agave syrup which is lower on the glycemic index. I used to make my mother’s old recipe, but she used brown sugar and ketchup. I adapted my mother’s recipe, but instead of using ketchup which is also full of sugar and salt, I used tomato paste. If you want a lower sodium sauce you can use low-sodium tomato paste. I added hickory smoke which gives it a great barbecue taste. I hope my husband enjoys this and you, too! Rich Chocolate Ice Cream for Machine (Regular or Dairy Free)
This chocolate ice cream recipe is just to die for! I double the recipe and make it in my 2 qt. Cuisinart Ice Cream Machine. It is the richest ice cream I have ever tasted! The original recipe I tried earlier had less non-fat milk and more half and half. That was way too rich! Check out my version and it is still super rich and triple chocolate though I have lessened that, as well. Continue reading “Rich Chocolate Ice Cream for Machine (Regular or Dairy Free)”
Gluten Free Tender Pork Chops with Red Sauce and Rice
If you like an occasional pork chop, but find them too dry, try my mother’s recipe. It’s naturally gluten-free. She used to call it, “Pork chop rice and gravy”. I like to call it that, too, but most people call it pork chop with red sauce. It is a very easy pork chop recipe with few ingredients. These are really tender pork chops. They are so tender you can break it up with a fork, especially the pork chops with a bone. Continue reading “Gluten Free Tender Pork Chops with Red Sauce and Rice”

Chocolate Almond Milk Ice Cream Recipe
I adjusted my sinfully rich chocolate ice cream recipe to this much healthier version, even higher in protein, plus tons of fiber, all without the refined sugar and cow’s milk though it does contain eggs. It is still very delicious for such a healthy ice cream recipe. You can make chocolate, raw almond milk ice cream, chocolate raw pecan milk ice cream, chocolate raw hazelnut ice cream, or whichever nut you choose.
